Homemade sourdough bread
This is how I knead and proof my dough in order to get an open airy crumb bread, with a soft and elastic crumb and an incredible country flavour.
To get such an oven spring, I use Dutch oven to capture the steam inside. After the bread is completely raised in the oven, (and this should happen in 20 minutes)I remove the lid and bake that nice brown coloured crust.

List of ingredients:
- 750g Manitoba flour
- 100g rye flour
- 600g water at room temperature
- 360g sourdough starter at 100% hydration
- 24g salt
This means, 1831g weight of the final dough, 76% hydration.

This is bread with a special ingredient, fermented bran and cornflour. It is what remains from making borsh. This thick mixture is your new borsh starter, called husti in Romanian. Romania has a tradition of using it for diets, traditional home medicine and even for beauty treatments. Why not adding it to bread then?

100% Whole Grain Rye Sourdough Bread
A very simple recipe with 100% whole grain rye flour made with sourdough
Ingredients:
Preferment
- 50g rye sourdough 100% hydration
- 420g water
- 420g whole grain rye flour
Dough:
- 825 whole grain rye flour
- 725g lukewarm water
- 15g salt
- 50g barley malt (optional)

Pumpkin sourdough bread:
Ingredients:
- 590g strong wheat flour (14% protein)
- 100g spelt flour
- 100g rye flour
- 300g water
- 200g pumpkin juice (or just water)
- 150g sourdough at 100% hydration
- 15g salt
- 150g pumpkin puree
- 100g roasted pumpkin seeds
- 2 cinnamon sticks (only for decoration)

The Best Sourdough Pizza baked in a wood-fired oven
This is how I bake sourdough pizza almost every week for my family. This recipe is very easy to do and it is very flexible to fit your daily schedule.
Any kind of wheat flour can be used, from all-purpose to strong bread flour. More, you can do this recipe with fresh starter or with discarded sourdough taken straight out of the fridge.
The dough rise happens overnight at temperatures lower than 17ÂșC. If the temperature is higher overnight, just put it in the fridge overnight and continue the rise the next day.
You do not need to babysit the dough for the pizza, you can have some simple indications using bowls of a specific quantity. When the dough reaches the lid, then it is ready to be stretched.
The choice of ingredients on the top is a matter of preference. I show you in this video the versions that I do the most but feel free to use your own preferred ingredients for the toppings.
Dough ingredients for 4 pizzas @28cm diameter:
- 640g wheat flour
- 400g water
- 220g sourdough starter (fresh or discard)
- 14g salt

100% Whole Wheat Sourdough Bread
This is the healthiest bread that you can get from whole wheat. It is tricky to make a successful one because you need a bit of skill and knowledge about how to manage this type of flour.
