The recipe ingredients for Day 1 of "A Simple Christmas" are as follows:
Lentil Peas
3 cups of Lentil Peas (soaked for at least 2 hours)
2 Tablespoons of Garlic (diced)
1/2 Medium Onion
1 Thai Chilli Pepper
1 Green Onion
3 cups of water
1/2 Vegetable Bullion
3 Tablespoons of Butter
1/4 Teaspoon of Salt
1/4 Teaspoon of Black Pepper
Honey Citrus Vinaigrette
1/2 cup of freshly squeezed orange juice
1 1/2 cup of Olive Oil
1/2 teaspoon Dry Parsly
Dash of Mustard
1/4 Teaspoon of Salt
1/4 Teaspoon of Black Pepper
Bananas Foster
1/4 cup Butter
2 or 3 Bananas
1/2 cup Pecans
1/2 Teaspoon Cinnamon
1 1/2 Teaspoon Vanilla Extract
1/8 cup Dark Rum
Dash of Ground Nutmeg
3/4 cup of Brown Sugar (Demerara preferably)

Chef Marc is making some Ground Provision, Saltfish and Veggie Stirfry. We are back in the kitchen making "Somethin' from Nothin'", as he makes another leftover classic. We found some leftover ground provisions in the fridge and we combined that with some, salted cod and nutritious veggies and viola, we have a sumptuous lunch or dinner. One can make substitutions of leftover potatoes or sweet potatoes if you haven't any ground provisions. It's all about using up what is in your refrigerator, saving money and creating nutrition for the yourself and loved ones with what is found.

To make this weeks recipe, you will need :
2 Baby Bok Choy
1 Tomato
1/2 A medium onion
1/2 Bell Pepper
1 Green Onion
3 Cloves of Garlic
1/4 head of Savoy Cabbage
Leftover Ground Provisions or Potatoes
1/3 pound of Salted Cod,
A squeeze of Lemon or Lime for the fish if needed
Remember, the ingredient amounts are what I found in my fridge and are all approximate. If you have a little more or less ingredients than I did, just use what you have. It's all about having fun, getting rid of spoilage and avoiding "running back out" to grab food at a restaurant. Enjoy!
