EASY RICE COOKER CAKE RECIPES: Sweet Potato Cake with Cream Cheese Icing
INGREDIENTS:
• 1 cup (140g) ALL PURPOSE FLOUR
• 1 tsp (3g) GROUND CINNAMON
• 1 tsp (3g) GROUND GINGER
• 1/4 tsp ALLSPICE
• 1/4 tsp SALT
• 1 tsp (4g) BAKING SODA
• 2 EGGS
• 1 cup (250ml) VEGETABLE OIL (I used coconut oil)
• 1 cup (200g) SUGAR (caster sugar)
• 1 tsp (4g) VANILLA EXTRACT
• 1 1/2 cup (225g) SHREDDED SWEET POTATO
• 1/2 cup (60g) FINE CHOPPED WALNUTS
FROSTING (optional):
• 1/2 cup (63g) UNSALTED BUTTER (room temp)
• 1/2 cup (113g) CREAM CHEESE (room temp)
• 1/2 cup (70g) POWDERED/ICING SUGAR
• 1/2 tsp VANILLA EXTRACT
HOW TO:
1. Combine flour, cinnamon, ginger, all spice salt and baking soday in a bowl and whisk until well combined
2. In large mixing bowl, mix eggs, oil, sugar and vanilla extract until light in color and creamy; about 2 minutes
3. Add half of the flour mixture into the batter and mix to blend. Then add the rest of the flour and mix until incorporate, scraping the sides to ensure everything is mixed. Watch video for batter consistency
4. Fold in shredded sweet potato and chopped walnuts and mix to combined
5. Lined pot with parchment paper and pour in batter. Cover with paper towel before closing
6. Bake for 3 COOK cycles (1 hour 30 minutes) then check. Baking time may vary so check after 2 cook cycles
7. Allow cake to cool completely, 60-90 minutes before frosting
7. Mix frosting ingredients together until well blended. Keep it cool until ready to use
OVEN BAKING:
Bake in pre-heat oven at 350F (177C) for 25 - 30 minutes. Ovens varied so check after 25 minutes and bake longer as needed.
