保山辣子饭———生活不一定大鱼大肉，但一定要有滋有味！【滇西小哥】
辣子饭的起源是在工地旁，工人顶着烈日，干活劳累，需要补充脂肪和盐分，而且喜爱重口味的饮食，老板就用价格便宜的猪皮和猪头做荤菜，烧椒酱来拌饭，再加一个酸辣的水腌菜凉拌，一大碗不过10元钱，实惠又好吃！现在逐渐有越来越多的人喜欢这火辣接地气的味道，辣子饭也就成了一个当地的特色美食。
The place of origin of the rice with chili sauce is near the construction site. Workers were exhausted working under the scorching sun, so they needed to replenish fat and salt. Besides, they liked to have spicy food. So the owner of the restaurant used cheap pig skin and pig head to make a meat dish, and mixed rice with chili sauce, added with cold pickled cabbage which tastes sour and spicy. A big bowl of it cost only ten yuan, cheap and tasty! Nowadays, more and more people enjoy this hot and simple flavor, and the rice with chili sauce has become a local specialty.

Add some shredded onion, potato and carrot along with some relish. Mash it. Squeeze lemon onto it and add seasoning. That’s how to cook pound chicken feet of Dai style, a sour and spicy dish. I've wanted to make this series for a long time. I've planned a lot of ingredients for the root series, but I didn't expect Chinese yam and arrowhead to be the theme of the first episode. Yunnan people love roots as much as they do flowers and fungi. We even believe that all the roots that grow under the soil have a certain medicinal value. Nourishing food benefits our health, dispels coldness from our body and relieves fatigue. I hope the new series can show you some different Yunnan foods.

In every spring when the wind blows, branches start to sprout and bloom all over the mountains. Generations of Yunnan people live off the mountains. Tender sprouts and wild flowers in the mountains are made into delicious dishes we usually eat. Because of the short blooming period and fast growth of sprouts, there’s only a time window of less than half a month when you get to have such fresh wild food from the mountains. It takes a lot of effort to come all the way here in this high mountain. We might as well pick as many as possible and binge eat them back home.

我们拍摄会跑很多地方找素材，每到一个地方就会认识新的人，他们甚至不知道我是干嘛的，但都特别热情的帮忙，会把家里最好的东西招待我们，带着我们找食材，给我们介绍他们的民族文化。这期视频是7月底在版纳的时候随手记录的，这两天翻翻素材，觉得有意义就剪成了一个短片分享给大家。
We do a lot of travelling to find material for filming. Everywhere we go, we meet new people. They don’t even know what I do, but they all warmly help, entertain us with the best of their family, take us to find ingredients and introduce us to their ethnic culture. This video was recorded in passing while we were shooting in Xishuangbanna at the end of July. We’ve been going through the material for the past few days. We felt it was meaningful, so we made a short video to share it with you.
