homemade-lamb-stew-recipe-pressure
Today we are making homemade lamb stew. This is a go to recipe for us and a great way to use vegies and of course or home grown Icelandic lamb. This is a great pressure canning recipe and since we have sent several rams to be processed we will be cooking lots of lamb in the near future to help free up some freezer space!
Recipe:
5 pounds lamb stew meat
3 quarts potatoes cubed
2 quarts carrots sliced
3 cups celery chopped
3 cups onions chopped
2 -3 tsp salt (I prefer 3)
1 tsp thyme
1/2 tsp pepper
broth or water to cover
Brown meat, then add all other ingredients. Add enough boiling broth or water to cover and then bring whole thing to a boil.
pack hot stew in jars leaving 1 inch headspace then process in your pressure canner at 10 pounds pressure for 75 minutes for pint jars and 90 minutes for quart jars.

If you raising sheep, worms are the silent killer. In particular, the barber pole worm is the worst internal parasite for anyone raising sheep or raising goats as this parasite hits them most often mid-summer when they are out on pasture. Hopefully, this video doesn't put you off raising sheep, but we do hope it reminds everyone that not every aspect of homesteading or farming on a small scale is a pleasant one.

Cooper's Hawk Visits the Feeders
During the last snow fall the bird feeders attracted a dinner guest of a different kind. A juvenile Cooper's Hawk (Accipiter cooperii). The Cooper's Hawk is an accipiter or bird hawk but they typically have their sights set on smaller birds like songbirds and doves (not poultry). Was an excellent moment as this young hawk sat patiently for some time just outside the window allowing for a good look and chance to film! Anyways just a few moments of some natural activity around the farm. Hawks do fulfill an important role in the ecosystem and while often portrayed as the "bad guy" but having diversity on the farm (including predators) is a sign that the local ecosystem is in decent shape.
