A lunch time ramble about being more resilient and calm right now.
With an impromptu InstantPot Oxtail Massaman curry!
- Knob of Beef dripping
- 1Kg Oxtail
- 400ml can of full fat Coconut milk
- 6 florets of broccoli (Cos that's what was in the bag)
- A "splash" of num pla (I'd guess about 2tbsp)
- ~10 drops of stevia.
- A "good splash" of double cream (Cos there was too much chilli for me! I'd guess about 50ml)
Put the instantpot on saute
Melt the dripping & brown the Oxtail in the pot.
Remove and then add the massaman paste
Cook that out for a minute or so
Add the can of coconut milk to the instantpot and mix the paste in thoroughly (I used a whisk)
Add the oxtail back in, slap the lid on.
Set the valve to "sealing" and the pressure cook function for "Normal pressure" for an hour
Allow to natural release until when you are ready to eat (I left it for a couple of hours)
Remove the tails and shred the meat (be sure to nibble and suck the bones to get the jelly cartilage off them - it's excellent for joints! :-))
Seperate the fat from the sauce and pop sauce into a saucepan.
Add in the brocoli, num pla and stevia.
Bring to a simmer to cook/defrost the brocoli
Pop in a bowl and add some cream to calm down the chilli

I feel that finding your particular creative “thing” is very important – because creating is all about focusing in the now.
Being creative talks directly to your Limbic brain, the part of your brain that has no language, no sense of time, and can put no context to anything you experience – It’s where your gut reactions, your “feels” originate.
