A dish with my twist, really amazing on flavor that you never get tired of eating. I made pan fried Salmon steak with lovely citrusy spices and to serve, green sauce, it goes really well with that refreshing and citrusy flavor. You can also serve as a main meal with salad, fries, mashed dishes, rice, bread, etc.
To marinate Salmon 3 tbsps Lime juice 1 tsp black Pepper 0.5 tsp Chili powder 1 tsp Paprika 2 tbsps Garlic paste 1 tsp Cumin powder 1 tsp Salt or to your taste 2 tbsps Olive Oil
To spicy green sauce 1 ripe medium Tomato 4 tbsps green Coriander 0.5 tsp Salt 2 cloves Garlic 1 long green Chili 1 Olive Oil 1 tbsp Lime Juice

This Ghee recipe is going to be slightly adjusted, that I am trying to get the flavor and texture that I really like, which is a richer, grainy, runny texture with nutty aroma and flavor.
To make like this is very easy just have to cook 30 seconds more than normal for example if it takes 20 minutes, I will cook it 20 minutes and 30 seconds, which changes whole perspective of it and the liquid Ghee becomes rather caramelized and when it becomes solid it will be Golden, grainy, runny, richer with nutty aroma because of the crystallization of fats and cooking time.

Actually the recipe was one of the dishes that was cooked in my older sister’s wedding feast when I was young and still I tried to be sneaky in the Kitchen and saw how the professionals were preparing it, the Pulao was so delicious so I kept remembering the recipe ever since, even though I never knew I’m going to cook it on YOUTUBE but I’m here and I'm really happy to share it. Today I make a very colourful summer salad with very rich ingredients that we can enjoy as a main meal in summer season because it is quite fillinng. You wont want to stop eating the salad, it is sweet, sour, savery and has a tangi flavour. Enjoy!
Time for preparing 25 to 30 minutes
Serves 4 for main meal with bread or 6 as a side dish
Ingredients
200g Smoked Salmon thinly sliced
12 Quail Eggs boild and peeled
1/2 of Cucumber slices
150g Mini Cucumber slices
200g Tomato Cherries
1 Carrot slices in strips (optional)
150g Salad Lettuce chopped in strips
100g Rocket salad
Basil leaves for decoration
Fruits as you like
1 Mango ripe but not soft
1 Avocado
200g Strawberries
Vinaigrette
4 tbsp Extra Virgin Olive Oil
2 tbsp Lime Juice (can add more if you want it more savery) or Vinegar
1&1/2 tbsp Dijon Mustard
1 tbsp Honey
1 tbsp Capers mincely chopped
1 tbsp chopped fresh Basil leaves
Salt and pepper at your taste
How to make
Prepare/clean all ingredients first then boild the Quail Eggs and peel and keep a side.
To make vinaigrette put all ingredients into a bottle and shake it to mix well then add salt and pepper at your taste and keep a side.
On the serving use a large tray/plate
Put the strips of salad lettuce and rocket, and add the strips of carrot on top.
In a bowl put the sliced mini & normal cucumber, tomato cherries and boild eggs then add half of vinaigrette, mix it well then add all mix on top of salad in the serving plate.
Add all fruits beautifully, add salmon on top of it then decorate with basil leaves.
Drizzle the remaining vinaigrette all over the salad. Now your salad ready to eat. enjoy!

Ghee is a very important ingredient in Nepali Kitchen, its traditional process to make takes quite a bit of time. My mother still makes it and they are so aromatic and fragrant. I normally bring from home because it is hard to find it in west proper one and they can be expensive.
Then I decided to make my own ghee instead of bringing always from home. With unsalted butter I tried a few time already and went very well, I’m loving it I find out that it is a very good substitute for the one I bring from Nepal. Trust me it doesn’t have much difference, the only different is a slightly smell but when you taste and cook the flavors are similarities so I’m quite happy that I found out this solution. If you are wondering about ghee, thinking that you can’t find and it’s too expensive then this is the solution for you, you can buy unsalted butter every corner in the west so why don’t we make it in our home. Follow my recipes you will save a lots of money, hassle and time.
