Dalwhinnie Distillers Edition Scotch Whisky From the highest distillery in Scotland (at 326 metres above sea level), set in the windswept Grampian mountains of the Highlands comes this remarkably well-rounded malt. This expression comes with and extra twist: As with previous bottlings, the 1998 is an Oloroso-Sherry cask finished Dalwhinnie. Bottled in 2015, the natural honey and orchard fruit notes lend Dalwhinnie to a range of desserts - anything from cheesecake to chocolate truffles.

Established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. Matured in a combination of both Bourbon and Sherry casks, Kilchoman Machir Bay is a well-balanced combination of rich tropical fruit, peat smoke, light vanilla and intense sweetness.

This Single Malt from the Yoichi distillery has finished its maturation in casks which contained brandy. Apples are a strong symbol of Nikka's history, they are often associated to the relationship between Rita and Masataka, when she encouraged him to start his activity by selling apple juice and brandy while the first whiskies were ageing in the cellars.

Today we are filming live from the Talisker Single Malt Scotch Whisky Distillery.
After a number of false starts, the Talisker distillery was founded in 1830 by Hugh and Kenneth MacAskill. It opened at Carbost in 1831 after they acquired the lease of Talisker House from Clan MacLeod. In 1879 it was purchased for £1,810 (equivalent to £195,800 in 2021) by a firm which became known as R. Kemp & Co. when it had a production capacity of 700 gallons per week.
The distillery was rebuilt 1880–87 and extended in 1900. By 1894 the output was up to 2,000 gallons per week. In 1895 the business was converted into a limited liability company with Thomas Mackenzie as managing partner, but the shares were not offered to the public.
Talisker was acquired by Distillers Company in 1925 and is now part of Diageo.
The distillery was rebuilt again in 1960 after a stillhouse fire completely destroyed the distillery. The distillery operates five stills; two wash stills and three spirit stills. All the stills use worm tubs (condensing coils) rather than a modern condenser, which are believed to give the whisky a "fuller" flavour (itself an indication of higher sugar content). During this early period, the whisky was produced using a triple distilling method, but changed to the more conventional double distilling in 1928. After the 1960 fire, five exact replicas of the original stills were constructed to preserve the original Talisker flavour. In 1972 the stills were converted to steam heating and the maltings floor was demolished. Talisker's water comes from springs directly above the distillery via a network of pipes and wells.

Highland Park The Dark 17-Year-Old is a single malt matured exclusively in 1st fill European sherry seasoned oak hogshead casks. It’s been created by Gordon Motion, Master whisky maker by combining 125 of these casks together. It’s the first in a series of two and beautifully presented in a bespoke black glass, oak frame and booklet. Natural cask colour with flavours of dried fruits, cinnamon, toasted almonds, cedar wood, fruitcake and light peat smoke.
Highland Park The Light 17 Year Old is a whisky inspired by spring and summer on Orkney, the follow up to 2017's The Dark. A 17-Year-old single malt matured in refill American oak casks delivering a delicious sweetness delivered through notes of pear, nutmeg and vanilla. The Light is beautifully packaged in a bespoke green glass, oak frame and booklet.
