最近好流行壓模餅乾,聖誕節又快到了,好多媽媽們也在預定小朋友的過節小禮物,今天要來分享一個粉粉色系又可愛的聖誕節餅乾食譜,草莓與抹茶的夾心餅乾,用冷凍乾燥覆盆莓粉與抹茶粉就能簡單製作,也能與小朋友一起親子製作,覆盆莓夾心餅乾酸酸甜甜的,真的很好吃唷^^
Ingredient材料:
❤覆盆莓酥餅Strawberry Sandwich Cookies/10個
1.低筋麵粉/Cake flour 98g
2.覆盆子水果粉/Raspberry fruit powder 4g
3.泡打粉/Baking powder 1g
4.無鹽奶油/Unsalted butter 40g
5.糖粉/Powdered sugar 33g
6.鹽/Salt 1g
7.雞蛋/Egg 20g
8.香草精/Vanilla extract 1g
9.蔓越莓果乾-適量/
Dried cranberry fruit - appropriate amount
❤抹茶酥餅Matcha Sandwich Cookies/10個
1.低筋麵粉/Cake flour 98g
2.抹茶粉/Matcha powder 4g
3.泡打粉/Baking powder 1g
4.無鹽奶油/Unsalted butter 40g
5.糖粉/Powdered sugar 33g
6.鹽/Salt 1g
7.雞蛋/Egg 20g
8.香草精/Vanilla extract 1g
❤覆盆子內餡Raspberry Cream Filling
1.無鹽奶油/Unsalted butter 70g
2.煉乳/Condensed milk 35g
3.覆盆子水果粉/Raspberry fruit powder 5g
❤抹茶內餡Matcha filling
1.無鹽奶油/Unsalted butter 70g
2.煉乳/Condensed milk 35g
3.抹茶粉/Matcha powder 3g

大家好!歡迎來到我的頻道!今天我要和大家分享北海道六花亭必買伴手禮的經典蘭姆葡萄夾心餅乾自製教學,這款餅乾口感非常豐富,夾心充滿了蘭姆酒和葡萄的香氣,絕對是美食愛好者不能錯過的美味。
在這個影片中,我會一步步地教大家如何製作這款蘭姆葡萄夾心餅乾內餡,並且分享一些小訣竅和技巧,讓大家能夠在家輕鬆做出道地的味道。我會詳細介紹材料清單和製作步驟,並提供一些替代食材的建議,以便符合不同的口味偏好唷!!
材料/ Ingredients
經典蘭姆葡萄夾心餅乾
每份材料可做約10各
1.高騰日曬葡萄乾 50g
2.蘭姆酒 可淹過葡萄乾的量即可
餅乾麵團
1.砂糖46g
2.無鹽奶油63g
3.杏仁粉63g
4.低筋麵粉63g
5.蛋黃 25g
奶油夾心
1.無鹽奶油 65g
2.白巧克力 55g
3.蘭姆酒 5g
4.海鹽 0.2g
Rum Raisin Butter Sandwich Cookies
Each material can make about 10 pieces
1. Gaoteng sun-dried raisins 50g
2. Rum can be submerged in the amount of raisins
cookie dough
1. Sugar 46g
2. Unsalted butter 63g
3. Almond powder 63g
4. Low-gluten flour 63g
5. Egg yolk 25g
Cream Sandwich
1. Unsalted butter 65g
2. White chocolate 55g
3. Rum 5g
4. Sea salt 0.2g
做法/ Instructions
酒漬蘭姆葡萄
1.水滾後將葡萄乾倒入約5-10秒
2.泡開後我們用濾網將水份瀝乾放涼,裝到玻璃容器裡
3.加入蘭姆酒浸泡,蘭姆酒的量只要淹沒葡萄乾即可
3.至少要浸泡24小時才能完全吸收入味
#如果你不想要酒味太重,可以加入蘭姆酒後小煮一下,把酒精煮掉揮發
4.包上保鮮膜放冷藏靜置一個晚上
餅乾麵團
1.先將蛋黃與蛋白分離備用
2.將無鹽奶油室溫軟化後要來打軟
3.再將細砂糖加入奶油中打拌均勻
#在下任何一個材料前都要將碗邊刮乾淨拌均勻,確保每個步驟都有做到位
4.再將雞蛋一顆一顆的加入奶油內拌均勻
#讓蛋黃完全吃進奶油後在下入另一顆蛋黃拌均勻
5.再來我們先加入杏仁粉攪拌均勻
6.杏仁粉完全攪拌均勻後再來加入過篩的低筋麵粉
7.用切拌的方式來攪拌餅乾麵團,避免出筋
8.用L號的塑膠袋裁開
9.塑膠袋折成我們要的餅乾大小
10.將餅乾麵團桿平整,厚度是0.3-0.4mm
11.完成後我們跟蘭姆葡萄一起放到冰箱冷藏過夜鬆弛
12.隔天我們來準備烤餅乾,沒有餅乾模的也可以用刀子切割成你要的大小
13.餅乾麵團要保持在冰的狀態會比較好切割
14.將剩餘的麵糰像這樣收集起來在桿平,可以在壓出好幾片餅乾
15.將烤箱預熱上下火150度,烤20-25分鐘
#烤第20分鐘時,要隨時注意餅乾上色狀態,烤焙時間可以依你的餅乾量做加減
16.出爐的餅乾,移到餅乾架上放涼
蘭姆葡萄奶油夾心
1.先將白巧克力隔水加熱融化備用
#溫度是40°C左右,若太高溫會導致巧克力油水分離
2.將浸泡好的蘭姆葡萄瀝乾水分
3.將夾心用的無鹽奶油室溫軟化打軟
4.打軟後,加入溶化後的白巧克力醬打均勻
5.最後將奶油霜撒上點鹽巴與蘭姆酒提味
6.攪拌均勻就完成了我們的蘭姆夾心餅乾內餡
組裝
1.將蘭姆葡萄奶油夾心內餡裝入裱花袋中
2.在餅乾上先均勻的擠上一層夾心內餡
3.內餡與餅乾邊緣一定要保持一點間距,避免蓋起來的時候擠壓到爆漿
4.平均放上蘭姆酒漬葡萄
5.放上蘭姆葡萄乾後在輕輕擠上一層奶油霜
6.在餅乾表面上刷上一點浸泡過葡萄的蘭姆酒
7.再疊上另一片餅乾就完成我們的經典蘭姆葡萄夾心餅乾拉

2.榛果奶油 30g
3.杏仁粉 40g
4.新小提琴低筋麵粉 120g
5.糖粉 75g
6.蛋黃 36g
