Whole wheat Spinach Mushroom Corn Crepes ? ? ? ? ?
Brunch Goals is what I call these easy yet super delicious Crepes. Crepes is just a thinner French version of a pancake which is sweet or savoury. You can modify the filling as per your liking.
Recipe ????
Mushroom spinach corn filling
1 tbsp olive oil
1 onion chopped
2-3 garlic cloves chopped
1 tbsp butter
150 grams mushrooms
1 cup baby spinach
1/2 cup corn
Seasonings ( paprika, chilli flakes, salt pepper)
Some grated Parmesan cheese ( optional)

Crepes
1/2 cup whole wheat flour
1 cup milk
1 tbsp olive oil

Cheese sauce
1 tbsp butter
1/4 cup cream
Handful of grated cheese
Salt pepper

? ? In a pan sauté garlic , onion and mushrooms in some oil and butter. To that add spinach once mushrooms are cooked. Then add boiled corn and your favourite seasonings to make the filling.
?In a bowl mix wheat flour, milk and olive oil to make the batter.
To make the crepe, add the batter to Luke warm non stick tawa and swirl it around to form a crepe. Flip it to cook on both the sides.
? For the cheese sauce, on low heat mix and cook butter with cream and when ig reaches a boiling point, add cheese and seasonings. The cheese sauce is ready.
??? Assemble the Crepes by adding the filling to the prepared crepe and pour the sauce over it, along with some grated cheese.
