大家好,我是小豪。我一直觉得带有一点点酸酸口味的蛋糕特别好吃,会让人欲罢不能,吃了停不下来。就像今天我们要做的柠檬流心磅蛋糕,甜中带一点酸,非常好吃!磅蛋糕一般上都比较甜,这次的食谱我修改了几次,最后的甜度刚刚好,柠檬酸味也不会过于浓烈,另外呢,我还改用分蛋法来制作,蛋糕的口感更加松软,喜欢的小伙伴赶快来试试吧!

【柠檬卡仕达酱】
A级蛋 1个
细砂糖 60g
牛奶 25g
柠檬汁 25g
玉米淀粉 5g
无盐黄油 30g

小火煮至浓稠。

【柠檬磅蛋糕】
无盐黄油 120g
细砂糖 35g(蛋黄)+40g(蛋白)
A级蛋 2个
低筋面粉 100g
泡打粉 1/2tsp-3g
盐 1g
柠檬汁 25g
1个柠檬的柠檬皮

烤箱中层,180°C上下火烤50分钟。

The final sweetness is just right, and the lemon sour flavor is not too strong. In addition, I also use the egg-separation method to make the cake soft and fluffy, come and try it!

【Lemon Custard】
Grade A egg 1pcs
Caster sugar 60g
Milk 25g
Lemon juice 25g
Corn starch 5g
Unsalted butter 30g

Low heat cook until thickened.

【Lemon Pound Cake】
Unsalted butter 120g
Caster sugar 35g (yolk) + 40g (white)
Grade A eggs 2pcs
Cake flour 100g
Baking powder 1/2tsp-3g
Salt 1g
Lemon Juice 25g
Zest from 1 lemon

Bake in the middle rack of the oven at 180°C for 50 minutes.
