我是小岱,因應粉絲要求,這次做了生酮烤牛奶
其實這個烤牛奶看似簡單,但試驗的過程中真的不容易
我認為烤牛奶就是烤卡仕達醬,傳統的卡仕達醬有淀粉的支撐容易成形
但沒有淀粉的作用下在烤製的過程難以支撐,容易塌下
所以烤了5次以後決定用紙托,果然成功了
希望這是你喜歡的烤牛奶~
I am Toian .
In response to the request of my fans, I made keto baked milk (Custard).
In fact, this baked milk seems simple, but it is really not easy during the experiment.
I think baked milk is baked custard .
The traditional custard sauce is supported by starch and is easy to form.
However, it is difficult to support in the baking process without starch, and it is easy to collapse.
So after baking 5 times, I decided to use a paper tray, and it really succeeded.

❥材料INGREDIENTS :
忌廉芝士(奶油奶酪)40克
淡忌廉(淡奶油)300克
水/杏仁奶100克
蛋黃2個
椰子粉10克
黃原膠10克/洋車前子殼粉20克
赤藻糖醇50克
1.將所有材料放到不粘鍋攪拌至無顆粒
注意的是,椰子粉和黃原膠需一並攪拌後使用,防止結塊
2.攪拌均勻後如發現仍有一點顆粒可放到盆裡用手持打蛋器打至順滑
3.放烤牛奶放到容器中,並塗上一層厚厚的全蛋液
4.放入烤箱200度烤製20分鐘
5.中塗(約在15分鐘時)再塗上全蛋液
6.稍微放涼後即可食用
7.冷藏起來更好吃!
Cream cheese 40 g
whipping cream 300 g
water/almond milk 100 g
2 egg yolks
coconut flour 10g
Xanthan gum 10 g /Psyllium husk powder 20g
Erythritol 50g
1. Put all the ingredients in a non-stick pan and stir until there are no particles
Note that the coconut flour and xanthan gum need to be mixed together first prevent agglomeration
2. After mixing evenly, if there are still some particles, put it in the basin and beat it with a hand-held whisk until smooth
3. Put the baked milk in the container and coat it with a thick layer of whole egg liquid
4. Put it in the oven and bake at 200 degrees for 20 minutes
5. Intermediate coating (approximately 15 minutes) and then apply egg liquid
6. It can be eaten after letting cool slightly
7. It tastes better when refrigerated!

我最愛吃芝士夾心的小蛋糕!
❥材料INGREDIENTS :
無糖優格/酸忌廉90克
抹茶粉6克
赤藻糖醇50克
1蛋
豆渣粉/椰子粉30克
泡打粉5g
夾心:
忌廉芝士(室溫)60克
前提準備功夫:
1.烤箱預熱160度
2.夾心部分將忌廉芝士放至室溫(軟化)
做法和步驟:
1.無糖優格/酸忌廉先和抹茶粉攪拌均勻至無顆粒狀態
2.加入代糖,我用的是赤藻糖醇(0.7倍甜度)
3.繼續加入蛋攪拌均勻
4.再加入[豆渣粉/椰子粉](其中一樣即可) 和泡打粉
5.夾心部分:忌廉芝士軟化好,攪拌至順滑(軟化好的忌廉芝士很容易變得順滑)
再放入裱花袋裡
6.放油紙在蛋糕模上(方便脫模)
7.先加入蛋糕糊,然後震至平整
8.再擠入夾心部分(忌廉芝士)
9.表面加點杏仁片裝飾
10.送進烤箱:160度25分鐘
11.放涼後即可食用
***冷熱可吃(常溫口感較鬆軟,放進冰箱後會變硬)
***我用了6連蛋糕模(長26.5cm,寬18.5cm,容量約260克)
Unsweetened Yogurt /Sour Cream 90g
Matcha powder 6g
Erythritol 50g
1 egg
Okara powder/coconut flour 30g
Baking powder 5g
Filling:
Cream cheese (room temperature) 60g
(***machine translation***)
Practice and steps:
1. Mix the sugar-free yogurt/sour cream and matcha powder evenly until there are no particles
2. Add sugar substitute, I use erythritol (0.7 times sweetness)
3. Continue to add eggs and mix well
4. Add in [Okara powder/coconut flour] (one of them is fine) and baking powder
5. Filling part: soften the cream cheese and stir until smooth (softened cream cheese can easily become smooth)
Put it in a piping bag
6. Put greased paper on the cake mold (easy to demould)
7. Add the cake batter first, then shake until smooth
8. Then squeeze into the sandwich part (cream cheese)
9. Garnish with almond slices on the surface
10. Into the oven: 160 degrees for 25 minutes
11. Serve after cooling
***Eat hot or cold
(The taste is softer at room temperature, and it will harden after being put in the refrigerator)
***I used 6 cake tins (length 26.5cm, width 18.5cm, capacity about 260g)

注意:
麵團夠薄約1CM
不然要延長時間才會脆
小秘訣:
如發現烤過後不脆,可放涼後放冰格(冷凍)15分鐘馬上就會變脆!

note:

Tip:

溫水warm water 30g
1蛋1egg
3蛋黃3 egg yolks
赤藻糖醇Erythritol 40g
椰子粉coconut flour 15g
洋車前子殼粉Psyllium husk powder 5g
椰奶Coconut milk 70g
mold模具:450g
鮮酵母:發酵1小時,攪拌一下再繼續發酵半小時
乾酵母:發酵1.5小時以上,攪拌一下再繼續發酵1小時
Fresh yeast: raise for 1 hour, stir and continue to raise for another half an hour
Dry yeast: raise for more than 1.5 hours, stir and continue to raise for 1 hour
先下火180度20分鐘,後上火180度10分鐘
Fire at 180 degrees for 20 minutes first, then heat at 180 degrees for 10 minutes
