I came across this recipe in America's Test Kitchen's cook book, The Complete Mediterranean Cookbook. I have made some changes for myself and that probably will irritate koshari purists, but that's just the way it is. This takes a while to make so I cut quite a bit of corners when I put this together for me and Dave. 1 C elbow macaroni 1 C dried lentils 1 C rice 1 C onions and peppers 4 oz chorizo 28 oz can crushed tomatoes 15 oz can chickpeas (rinsed) 2 tbsp olive oil 1 tbsp garlic powder 1 1/2 tspn coriander 1 1/2 tspn ground cumin 3/4 tspn ground cinnamon 1/4 tspn nutmeg 1/4 tspn cayenne pepper 1 tbsp balsamic vinegar salt 1. Cook the elbow macaroni according to the directions on the box and set aside. 2. Using the same pot, combine lentils, 4 cups of water and a teaspoon of salt and bring them to boil. Reduce heat to low and cook until lentils are tender, 15 to 17 minutes. 3. Meanwhile heat olive oil in a large frying pan, add the chorizo and sauté for about 10 minutes. 4. Add onions and peppers to the chorizo and continue sauté-ing for another 5 minutes. 5. Spoon out the excess oil. 6. Stir in the garlic powder, coriander, cinnamon, cumin, nutmeg and cayenne pepper into the chorizo mixture. 7. Add crushed tomatoes and chickpeas to the chorizo mixture and stir. Bring to a simmer and then reduce heat and cook on low until you're ready to mix it in with the pasta, lentils and rice. 8. The lentils should be done by now, so remove them from the pot and set them aside for a moment. 9. American Test Kitchen recommends soaking your rice in hot tap water AND THEN rinsing and draining your rice FIVE times to remove excess starch. I do it, but if you don't want to that's fine. 10. Put two cups of water and one cup of rice [in the now empty pot you've used for the macaroni and the lentils] and bring to a boil. ADD the lentils to the rice and water. Cover the pot and cook the rice and lentils on low for 12 to 15 minutes. 11. Once the rice and lentils are done turn off the heat and add the already cooked elbow macaroni. I don't know why, but American Test Kitchen recommends you lay a towel over that mixture and then cover it for 10 minutes. It seems weird but I do it because it seems so specific that it must do something magical. 12. Now ATK wants you to ladle the tomato sauce mixture onto the rice, pasta, lentil mixture. I don't do it.
