彝族人家招待贵客的硬菜——胃包肉【滇西小哥】
为了储存猪肉，将猪肉装进猪肚子里，也是祖辈们的聪明智慧！猪香肚，肉蛋，包腊都是这道美食的不同名字，一个猪肚能装30斤左右的猪肉，因为制作时间长，加上切开后就没有办法继续风干，自然风干越久越香，通常只有家里来了重要的客人才会吃猪肚肉，所以也就成了彝族人家用来招待贵客的一道菜品～

Stuff pork inside pork tripes for storage is one of the wits of our ancestors! Stuffed Pork Tripe, Pork Egg or Wrapped Preserved Pork all refer to this delicacy. A tripe can wrap around 15 kg of pork. The making of one such tripe takes much time. Besides, once cut open, it cannot be left to dry again. The longer it's been preserved, the tastier it will be. As a result, such a delicacy is only served for the most distinctive guests. Gradually, this tradition has passed down from generation to generation.

「四季调料」撇菜根——藏在泥土里的云南味【滇西小哥】
村里家家户户都会在房前屋后种一些常吃的蔬菜佐料，常用的葱姜蒜苗必不可少，撇菜根、薄荷、老缅香菜也不例外……我们家爱吃撇菜根，是随了奶奶的习惯，她喜欢啥菜都要加点，生撇菜根有蒜和辣椒的味道，煮熟的撇菜根软糯中带有淡淡的清甜。这属于大家最不熟悉的云南佐料之一了……加上一个月前腌制的撇菜鲊，秋冬里吃起来味道正好～

We usually plant some common vegetables and spices around our houses. Besides the commonly seen shallots, gingers and garlic, we also plant wild chive roots, mints and Burmese cilantro. We all enjoy wild chive roots as it's passed down from grandma. She prefers to eat almost every dish with some wild chives. Raw wild chives taste like garlic and chilies, while cooked wild chives are soft and slightly sweet. It is one of the least common Yunnan spices. I also marinaded some wild chives a month ago. Now it's just the right time to enjoy them as well.

家里每年都种一些黄豆，除了平日里做豆腐外，会留一些到了冬天的时候做臭豆鼓，将黄豆泡发煮软后放稻草堆里发酵，捂出淡淡的豆鼓香，就可以直接加调料凉拌，是一道特色的傣味菜，也可以晒干后做成油豆鼓或者水豆鼓，装坛子里密封储存，水豆鼓是施甸最具有代表性的特产了，我们经常用来拌一些蔬菜，小时候在家里，吃习惯了不觉得美味，后来离家远了却开始想念这淡淡的豆鼓香，也开始爱吃用豆鼓做的很多美食！
