This hatch chili cornbread recipe is a keeper. Now that it's hatch chili season let's put hatch peppers in everything. Lol. This bread in particular is good with Texas Chili, Ranch style beans, or with a thick pat of butter.

Ingredients
* 1 cup flour
* 1 cup yellow cornmeal
* ¼ cup granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* 1 teaspoon salt
* 1 large egg beaten
* ⅓ cup milk
* 6 tablespoons melted butter
* 1 cup sour cream
* 4 ounces diced green chiles
* 1 cup grated sharp cheddar cheese
Mix the dry and wet ingredients separately at first. When you mix them together make sure you don't overbeat the batter or Masa as I call it.
Have your oven preheated to 400 and bake t for 25-35 minutes or until an inserted toothpick comes out clean.

Even year it falls on me to make the best turkey ever for Thanksgiving. I fried it one year, baked it in a bag another I’ve done it so many ways it’s hard to remember all the ways.

This year, I brined it all night before cooking it. What a delight. It came out with a beautiful crispy skin and moist meat.
And who doesn’t enjoy macaroni and cheese with their turkey, stuffing, green beans, and mashed potatoes? The answer is “EVERYONE” :)
Here’s my recipe for the Brine:
1C Himalayan Salt
2C Brown sugar
10 peppercorns
5 dried bayleaves
2 table spoons of Thyme
2 quarts of vegetal broth
The skin of one lemon
Bring to a boil and let it cool to room temperature.
Place turkey in a brining bag and fill the bag with the brine. Add additional water if needed to cover the turkey. Plan e the turkey in the refrigerator or in a cool place (under 40 above 35 degrees)
Turkey ingredients:
1 turkey
4 stalks of celery
2 carrots
1 lemon
1 stick of butter (room temperature)
Take turkey out. Remove turkey from brine and rinse the bird. Remove giblets. Dry turkey and stuff it with a whole lemon, an onion, celery, carrots. Rub skin with butter. place butter under breast skin. Place in a pan and place in preheated oven at 450 degrees.
Bake for 30 mins at 450. Lower to 325 and cook for the suggested amount of time for the size of bird you’re preparing. Thirty minutes before the suggested time test temperature. The temperature should be 150-155 degrees Fahrenheit. (The internal temperature will rise to 160.)
Remove the turkey from the oven.
Turn turkey breast side down and allow for it to rest 30 minutes minimum. After thirty minutes, turn it back over breast side up. Cut and serve. #Yummy

This comfort food is my go-to right after fried rice. All I need is a piece of chicken (we'll use the chicken breast this time) egg noodles, soy sauce, oyster sauce, an onion, garlic and ginger.

113 Grams unsalted butter
120 ml heavy cream (.5c)

3 tbls water
60 ml light corn syrup (.25c)
200 g sugar
a dash of salt
STEP 1 - Make butter and cream mixture
STEP 2 - add water, syrup, sugar
STEP 3 - Bring to a boil (Reach 320F or 160C)
STEP 4 - Add butter and cream mixture
STEP 5 - Bring to 240F or 116 C…. if you bring it up 5 more degrees F or 2 in C the caramel will be more tough or hard.
STEP 6 - Add a dash of salt just before you take it off the heat
