I took the recipe from Delia Smith's Cookbook and slightly adapted it. 12oz Whole Spelt flour 4oz Oat flour - which I made from Oat flakes in a coffee grinder 10z Oat flakes 8oz butter at room temperature 2 tsps baking powder 1tsp salt 1/2 to 1 tsp curry powder Small drop of milk to bind. Place the flours into a bowl with the baking powder, salt, curry powder and Oat flakes and mix. Add butter and rub it in until mixture resembles bread crumbs. Add a small amount of milk to bind the mixture together. Roll out on a floured board to about 3mm (1/8 inch) and cut out rounds. Place the biscuits on a greased baking tray and bake at gas mark 4 or 350F (180C) for 15-20 minutes until slightly browned. You could add grated cheese and less milk for a cheesy oat cake or you could add finely chopped raisins and a tsp of sugar for a sweet oat cake.
