Broth
-4 TBS extra virgin oil
-5 shallots, minced
-3 garlic cloves, minced
-1/2 TBS dry Basil or 40g fresh
-250ml / 1 cup White Wine
-800ml / 2 cans of whole tomatoes
-pinch of salt

Cioppino
-1/4 cup / 30g extra virgin oil
-1 stick celery, thinly sliced
-1/2 fennel root, finely chopped
-1/2 leek, or onion. Julienne
-2 oregano sprigs or 1 TBS dry.
-1/2 TSP crushed red peppers
-1/2 LBS/ 250g Clams, scrubbed
-1 LB / 500g Mussels, scrubbed
-1/2 LBS / 250g Shrimp or Prawns
-1/4 LBS / 100g Calamari (optional)
-2 3oz skinless fillets of fish,
(Hake, john dory, turbot, etc.)
-pinch of salt

Recipe: Chicken filling
- 500g / 1LB Chicken, dark meat
- 2g / 1/4 TSP Cumin
- 2g / 1/4 TSP Paprika
- Cilantro / Coriander
- lime juice
- add reduced stock
- salt to taste

Recipe: Spinach filling
- 500g / 1LB Spinach
washed and picked
- 150g / 5oz feta cheese
- 1 med onion
- 1 clove of garlic
- salt to taste

Dough
- 500g / 1LB Flour
- 6 TBS Lard / can sub butter
- milk, start with 1/4 cup / 60ml
add as necessary
- 1 egg
- salt to taste
-Oven 200C / 390F 10 min check and turn!
then 10 mins more or until done!
