This may be the BEST BANANA BREAD EVER! It is HEALTHY with white whole wheat flour (also known as white wholemeal, pastry wheat flour, soft wheat flour) and loaded with tasty dried fruits! Plus, NO SUGAR! For vegan version, substitute honey for maple syrup. Guilt free eaten! Almost ate the whole thing in one sitting. I hope you will enjoy it as much as I did. Yumminess!

Easy Healthy Banana Bread Recipe | No Eggs | No Sugar | No Oven | EASY RICE COOKER RECIPES

NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* VEGAN = substitute honey with maple syrup

INGREDIENTS:
• 1/4 cup (60g) DRIED DATES (chopped, firmly packed cup)
• 1/2 cup (105g) DRIED PRUNES (chopped, lightly packed cup)
• 1/4 cup (60ml) COCONUT OIL (melted)
• 1/2 cup (135g) GREEK YOGURT (plain, unsweetened)
• 1/2 cup (70g) DRIED CRANBERRIES
• 1 cup (260g) MASHED BANANAS (3 large or 3 1/2 med)
• 1/4 cup (75g) HONEY (or Maple Syrup for Vegan)
• 1/2 tsp (3g) VANILLA EXTRACT
• 1 cup (145g) WHITE WHOLE WHEAT FLOUR (soft wheat, pastry wheat)
• 1 tsp (5g) BAKING SODA

HOW TO MAKE IT:
1. Mix all ingredients, except flour and baking soda, in a large mixing bowl to combine
2. In a separate bowl, mix flour and baking soda together for about 1 minute
3. Add flour mixture to wet mixture and fold just until there is no more white flour
4. Pour batter into pot/pan then smooth out the top. Tap pot/pan on table/counter a few times to evenly distribute the batter
5. Bake 3 bake cycles (90 min). Rice cooker varies so check after 2 bake and bake longer as needed
6. Cool in pot for 30 minutes before removing and cutting

OVEN BAKING:
Bake in greased and lined pan in preheated oven of 350F (180C) for 35-45 minutes. Ovens varied so check about 35 minutes and bake longer as needed
