Preparing a Lamb for Greek Easter- Roasting on a Spit
Last year my brother and I roasted a lamb on a spit. Nothing beats the taste of a lamb slowly cooked this way. It is well worth the trouble.
My brother rents a rotisserie and we prepare the lamb the night before. We remove the head only so as not to scare the kids, but most people leave it attached. The heart, lungs, and liver are used to make the Greek soup Magiritsa. We cook the "beast" for a minimum of 5-6 hours, basting with a mixture of olive oil, lemon and salt so as not to let the skin crack and dry.
