My dear, today I came up with how to prepare homemade noodles. It is very easy and healthy. Now a days noodles are very famous and kids love them. Preparing homemade noodles is not a difficult task. It is one of the easiest methods and easy to prepare.
When I was pregnant, at midnight I started craving for noodles. No shops are open at midnight so I found this recipe on the internet and followed the procedure and the outcome was good. After that I am not buying a noodle packet from outside. Now a days I am making noodles like this and adding any type of masala from my wish list. I do not notice much difference between stores bought noodles and homemade noodles.
Main highlight of this recipe is instead of all-purpose flour I added from wheat flour. So this is best for health too. Wheat flour is the best for this. I have not added any flavors and eggs. This recipe not need much ingredients, all are available in kitchen. The homemade noodles are just needed three ingredients that is wheat flour, salt and oil. The noodles are not fried it is boiled in water.
The homemade noodles do not need much time to prepare. Just prepare the dough, boil in water to cook. Simple way to prepare noodles. The homemade noodles are used in soups, stir fries and other recipes too. The homemade wheat noodles are packed with nutrition like carbs, fiber, protein and iron content to our body.

Red chilly chutney is very popular in the South. It is a traditional and authentic recipe. It is one of the major side dishes for many dishes like dosa, idli and uttapam. In the south region there are two types of chutney, one is white and red. This is a simple version of red coconut chutney.
Red chilly chutney is a combination of coconut and red chilli. The red chutney needs only a few ingredients. The roasted red chilli and grind with fresh grated coconut and tamarind paste is the beautiful texture of red chutney. The salt is adjusted with taste buds. The simple tempering is enough for this chutney. The oil is heated with mustard seeds and some curry leaves. The tempering gives extra taste to the chutney.
Usually chutney shelf life is one day. If it is a hot place you can serve it within half a day. If tamarind is added to chutney it will increase the shelf life. If tamarind is hard you need to soak it for five minutes with hot water. I prefer fresh coconut but If you are using frozen coconut add warm water while grinding.
In many regions the breakfast is not complete without preparing the chutney. Chutney is the main dish for many breakfasts. The coconut chutney has no garlic and no onion recipe. We can do it any time, any occasion. We can add dal, onion, garlic and more ingredients but plain coconut chutney is good in taste.
Fresh coconut is very good for our body. Chutney is good for heart and weight loss. Fresh coconut saturates our body fat and improves good cholesterol in the body. Coconut is high in nutrients and contains protein, minerals, and vitamins. Coconut maintains blood sugar because it is low in carbs and high in fibre. Paratha is always good for health and easy to prepare but it is little time consuming. I love Paratha because it is filled with nutrition, healthy and can add veggies and no need for any side dish. So today's recipe is methi leaves Paratha.
Paratha is always the best option rather than chapathi or roti. Paratha is a flatbread and it is made with wheat flour. Methi leaves are helpful to control the sugar level and get rid of constipation. This is best to add in our diet. Many recipes can be tried with methi or Fenugreek leaves.
The methi leaves of Paratha are easy to prepare. This Paratha is a combination of wheat flour, methi leaves and some spices. The curd helps to soften the Paratha. Instead of crushed green chilli you can shift to chilli powder for spiciness. Masala and spices are completely optional.
This Paratha is not stuffed, just adding the leaves and spices and masala with plain Paratha. Methi leaves are a little bitter in taste. You can fry the leaves or boil in hot water for a few minutes if you feel bitter. Adding the masala brings down the bitterness of leaves so here I directly used the methi leaves.
The methi leaves are good for everyone. Definitely kids will love this paratha. So they are eating healthy and mom feels great and guilt free. It can be prepared for breakfast, lunch, and dinner. This is one of the lunch box recipes too. If it is difficult to roll the Paratha you can prepare thepla from adding the same ingredients.

Sweet lemon pickle is very easy and healthy. I gave a slight twist and made a sweetish pickle. The sweet lemon pickle is not instant and also does not need much time to do. This recipe is delicious and mouth-watering. This pickle is a famous Indian condiment.
The sweet lemon pickle is also called as khatta meetha nimbu ka achar. This pickle is really yummy and tasty. Sweet lemon pickle is available and prepared in lots of varieties. This pickle is filled with sour, sweet and little spicy taste. It is a perfect side dish for paratha, dosa, curd rice etc.
The lemons may or may not be ripe, we can use them for this pickle. Some people are removing seeds of lemons and it will also have no issues while preparing the pickle. Lemons must be clean and wipe off all the dust and must be dry before using it. Make small pieces of lemon because big size pieces are not giving good taste for pickles. Prepare salt water and this is not rocket science. Just boiled the water with salt for a little time after dissolving the salt. In Glass jar add all lemon pieces and salt water with extra salt closed for 2 days or to a week. It totally depends upon you. While preparing the pickle the lemon pieces must be soft, by that the sweet and spicy taste will be enhanced by lemon pieces.
For sweet lemon pickle I made the combination of jaggery and dates, red chilly. Dates must be soaked before using pickles. I prefer seedless dates to take because if you are taking seed dates you have given much more time to take all the seeds from it. For preparing the pickle roast the spices like red chilly, mustard, fenugreek seeds, hing or asafetida powder and turmeric powder separately. After roasted wait till all the ingredients are cool. Grind all the spices, and dates to a smooth texture.
Prepare the tempering, add masala and jaggery. Wait to add lemon pieces until jaggery melts in masala. Finally add lemon pieces to the masala without any salt water. After adding lemon pieces further boil little time. Mouth-watering and delicious pickle is ready. For this pickle I am not added vinegar or any other preservatives. Hence we need to store it in the refrigerator after 2 days. In the refrigerator we can store 6 months in good taste.
This sweet lemon pickle recipe is very easy and delicious. This pickle is completely healthy because here not added any sugar content for sweetness.

The chakli is famous Indian snack. This is also called as mullu murukku. Murukku is very old traditional recipe. The chakli or murukku is easy and simple to do. This snack is usually done by every Indian woman in every house.

Chakli is mixing of rice flour and urad dal flour. Roasted Urad dal flour gives nice aroma and taste to chakli. Urad dal and homemade butter helps the chakli to be soft. Salt needed to be adjusted to our taste. Black sesame seeds are optional for murukku. But remember one thing this is increases the taste of murukku. Adding of butter increases the softness of murukku.
The shaping of chakli is totally depends upon our decision. If you want to make more chakli dough prepare in batches. Otherwise it will lose moist and while doing murukku it will break. If it breaks then sprinkle some water and knead once again and press it in a presser. At last join the end otherwise it will open when you leave in to a hot oil.
The rice flour and urad dal flour can be store bought or homemade, I prefer to make it in home. Make the flour super fine when you prepare chakli with homemade flour. Count of chakli may vary from sizes of murukku. My family members like small size chakli’s well so i made small sizes.
The chakli is one of the fried snacks but it is not that much affected to our health when we do in home with quality ingredients. Chakli will not absorb much oil if the prepared dough doesn’t contain water content. If you feel water is high, keep aside for some time which urad dal flour will absorb the excess water content making the dough ready for fry.

In a hotel for the first time I tasted these cheeselings there. In that hotel, after ordering a dish, they will give a small bowl of cheeselings for munching and garam panaka. I liked their concept and these cheeselings. First time I heard and ate these cheeselings. At that time I felt that this was a super snack and searched for a recipe, but didn't find the recipe for long. Once I got this recipe on YouTube I was done and fulfilled my desire.
Cheeselings are made with all-purpose flour, cheese, butter and milk. Milk is added to prepare the dough. Cheese gives good taste and aroma for cheeselings. These combinations are too good. The dough must be rolled into very thin pieces and made into square shapes. Shapes are made using a cutter or sharp knife. Making a square shape is a little difficult task and time consuming, because we have too small pieces.
While frying also heat the oil and fry in medium heat. Once it turns to a semi golden color, take out from hot oil, don't wait to turn to dark brown color. Store an airtight container for a long shelf life. It stays good for fifteen days at room temperature.
