These were good, but I'm not a huge scone fan. Perhaps I would have enjoyed them more with the glaze, but some of the people I was feeding these to wouldn't necessarily have appreciated it. Maybe I'll try a half-recipe and do the glaze next time...
One of the easiest recipes I've put on here, for obvious reasons. Carbquik is a Bisquik replacement for people on low-carb diets. There is a lot of speculation as to just how low-carb it really is. I'm not going to get into that argument here. Suffice it to say, if you want a super easy biscuit recipe, you can't get much easier than this. There are recipes printed on the box, but pretty much all of them ending up having the slightly "different" flavor inherent to the product. My kids don't like it, so we don't eat many family meals with this. However, whenever my wife makes our Christmas morning breakfast pizza, it's nice for me to be able to eat the same thing with just a different crust. :)
***I should note that I found out after posting that this Carbquik was expired. I will try again to see if they rise better when it's still "active".

Another bread review. Unfortunately, they can't replace Extraordinary Bites Wheat Bread--at least in my book. It's a little gummy and doesn't have the same "yeastiness" that EB has been able to achieve.
I'm really glad that a lot of companies are trying, though. Definitely helps increase the level of knowledge out there around different formulations, which can only be good for the keto community as a whole!

This is a very simple recipe that I saw recently on Facebook and just had to try. Shannon Smith is the person that must be credited for this great recipe!
As I point out in the video, I believe that next time, I'm going to try making it in a cereal bowl so it can be more like a flat hamburger bun, but the texture and "not egg" flavor is just spot on.
--begin recipe
LUPIN MUG BREAD
1 serving
1 net carb per serving
Wet:
1 Tablespoon olive oil
1 egg
2 tsp unsweetened almond milk or HWC
Dry:
1 Tablespoon lupin flour
1/2 Tablespoon (1 1/2 tsp) oat fiber
1/2 Tablespoon (1 1/2 tsp) whey protein isolate
1/2 tsp granular sweetener
1/4 tsp baking powder
Whisk wet ingredients in one small bowl and whisk dry in another.
Dump dry bowl into wet bowl and whisk until smooth.
(I don't know why it works better to add dry all at once to the wet but it does).
Pour batter into a buttered ramekin or large mug and microwave for 90 seconds-2 minutes depending on your microwave and how dry or moist you like your bread.
Remove bread immediately from ramekin and let cool. Slice and enjoy!

When I saw this recipe, I knew I had to try it--very few ingredients, and made in a food processor?
It definitely isn't as "bready" as the psyllium husk variety, but if you don't have many ingredients, this is a great option. I'm still not completely happy with the rise, so I think I need to play with it a bit.

This is an attempt at Gloria Koch's* cinnamon sticks. I still don't have any erythritol in the house, so I'm having to "substitute backwards" with my sweeteners here. Regardless, it's still a successful recipe. Definitely worth keeping in the repertoire. Note that I've rewritten the recipe to be easier for me to follow.
CINNAMON STICKS:
Base:
8oz mozzarella cheese -- Yes. This is not a joke.
Dry Ingredients:
1/2 cup lupin flour
2 TBS whey isolate
2 TBS oat fiber -- NOT oat flour!
1/2 tsp salt
1 tsp baking powder
1/2 cup powdered erythritol -- I used sucralose (Splenda)
1/4 tsp cinnamon
a few drops of sucralose -- I used liquid Stevia
Wet Ingredients:
2 eggs
1/4 cup sour cream
Topping:
melted 2 TBS butter
1/4 tsp cinnamon
1/4 cup powdered erythritol -- I used sucralose (Splenda)
pinch of salt
a few drops sucralose -- I used liquid Stevia
Mix dry ingredients together.
Mix wet ingredients together.
Melt 8 oz of mozzarella in microwave.
Quickly mix both the dry and wet ingredients into the melted cheese.
Spread the dough onto a parchment covered cookie sheet, and cover with the topping.
Bake at 350 for 22 minutes until golden brown around the edges.
Enjoy!

Super simple trick if you want some different flavors for dessert: single serving drink mix packets mixed with heavy cream. Not much else to say. I use this as a (very filling!) snack, or as a topping for pancakes when I don't feel like maple syrup.
The day of this video, I actually made kiwi strawberry flavored instead of root beer, and put it on my pancakes. Awesome.
