Hi folks and in today's video I show you how to make puff pastry, the 1st part of the video is me showing you have to make the pastry dough. then the 2nd part of the video is shown your how to layer the pastry fats on to the dough, and then we go through 7 turns to make the full blown puff pastry, it's as simple that, Check the description for recipe and also chapters to help you through a video Chapters 00:00 Intro 00:39 Recipe & tutoring tips 01:26 Making pastry dough 04:28 Preparing the butter 06:28 Making the pastry 13:19 Last pastry turn / fold 15:14 Finished puff pastry 15:45 Tutoring tips #puffpastry #homemade #tutorial Puff pastry ingredients 453 grams Organic bread flour 85 grams Trex or white shortening 6 grams Salt 4 grams Cream of tartar 115 grams Cold water 340 grams Butter or pastry margarine Method best to follow Video Sift the flour into the bowl and rub in the white shortening, Add in the salt and the cream of tartar, then mix with cold water, turn out the contents on to work top and knead until nice and smooth and free from cracks, Press all the moisture out of your Butter with kitchen paper roll, Roll the pastry dough into not long strip same with butter ( the pastry must be a little longer and wider that the butter ) then place the butter on the top of the pastry and fold in three, Press the edges with a rolling pin, and turn so as to bring the folded edges to the sides, Roll into along strip, then repeat the folding and rolling until, in all, seven rollings have been given, allowing the pastry to stand in a cold place for a short while between each rolling.
