Disgusted with Kitchenaid Rant! Noreen's Kitchen
Greetings! Indulge us while we explain how disgusted we are with the Kitchenaid company and their service, or lack thereof as the case may be.
I have had this mixer since 2007, of course it is out of warranty, but today while kneading bread dough (according to the booklet instructions) No higher than a speed of 2 and no more than 14 cups of dough, my machine simply stopped spinning and went kaput!
I contacted the company and their response was that I could PURCHASE a shipping kit to have the mixer sent back to the factory for an assessment, wherein I would then pay a fee to have the mixer looked at and then they would tell me how much it would cost to fix it upon which time I would also be charged a fee to return the equipment to my home. $$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$
When I saw this model I was excited that I would be able to upgrade my previous mixer to a heavy duty model much like the one my mother has that is over 30 years old and still running strong. She was once a professional pastry chef and so hers had gotten a workout over the years, by beating gallons upon gallons of cake batter and butter cream frosting. Mine has lasted five years and is not dead.
We are going to attempt to fix it ourselves. We will have to replace the entire lower gear housing because it is cracked where the beater attaches to the orbiting shaft. We also have to replace the worm follower gear which is stripped. This is after Rick had to repair a loose lock nut (which was missing) before the holidays. I am just sick. I cannot afford to replace this mixer for another almost five hundred dollars and now that I have seen the display of customer service, I believe that I will seek out another brand altogether. Bosch here I come!

Rolling into the end of our Christmas in July week we wanted to present one more gift idea in the form of a product review. We reached out to the people at Copper-Chef to ask if they would be willing to send us one of their pans to try out and review for you! They were so kind to send us one of their deep square copper chef pan sets complete with a fryer basket, steamer rack and a set of plastic utensils. Today we are going to share with you how we felt about this pan.
We have been using this Copper-Chef pan for about a month and have done everything from scrambled eggs to frying and making the mac and cheese from their cookbook which was included. Our opinion is that this pan is all that they say and it is really great! I love this pan for a number of reasons. First, it is sturdy, next it has great heat conduction due to the stainless steel plate on the bottom of the pan. Next we love the fact that this pan is square and deep and you can fit a ton into it. We also love that this pan goes from the stovetop to the oven with ease and can sustain heat up to 800 degrees! My oven doesn't even go that high! This gives you the benefits of cast iron without the weight of cast iron.
When I told my mom that I was getting one of these to review she got excited so I will be giving her one for a Christmas gift! I think this would make a great gift for anyone on your list! The newlyweds, the foodie, the college graduate just getting their first place or anyone who is starting out. I think this pan is a great addition to just about any cookware collection. In my case, I have had and have used a lot of cookware. Some great, some, not so great. This pan is great and I can see myself using it for a long time to come.
We demonstrated the non stick surface by frying an egg dry! Unheard of and anyone who knows anything knows that frying an egg dry can be problematic and virtually impossible to flip over, much less remove from the pan in one piece. This pan did just that. We also did the old, burn a piece of cheese test. We slapped a slice of American cheese down in that hot pan and let it go. The results were stunning and impressive.

It's time to get thinking about our Easter menu. If you are in charge of entertaining for Easter the time is now to start thinking about what you are going to serve! This year Easter is set to happen on April 1, 2018. So let's not be fools and be unprepared! This recipe for Parmesan pesto crusted chicken breast is a real winner. It is simple, delicious and quick to make. You can make it ahead and stow in the fridge the day before making or you can even flash freeze these before cooking and thaw when ready. That way you can have these ready for anytime you need a quick, delicious meal to put on the table fast!
This is so simple and the flavor reward is so great, you might not believe how easy it is. This dish is fit for the finest company or for your family on a busy Wednesday evening. There are only a few ingredients that you probably already have on hand and you can make these in advance and in bulk if you choose as well. These will be a welcomed addition to any Easter or spring buffet or banquet or any entertaining opportunity.
I started with chicken breasts and sliced into two cutlets each. Then they were laid out on a baking sheet that was both lined with foil and brushed with olive oil. Each chicken breast was brushed with approximately one tablespoon of prepared pesto sauce and then topped with a crunchy topping made with mozzarella, Parmesan, panko bread crumb, olive oil and seasonings. That's it!
These bake for approximately 30 minutes or until done or when a meat thermometer reads 165 degrees. I like to allow these to rest for 10 minutes before serving to be sure they are just the right temperature and not too hot to enjoy.
I served these with roasted lemon asparagus and Farffale pasta dressed with roasted garlic marinara sauce. This was a delicious Sunday evening meal that my family loved a lot! We had two servings leftover for lunch the next day along with the sides. So this can stretch through the week and this chicken, is great cold sliced into a fresh salad!
I hope you give this parmesan pesto crusted chicken a try for your Easter menu or really anytime! I also hope you give this a try for bulk freezer banking and I hope you love it!

One thing I do know is that you cannot have Thanksgiving without stuffing! So today I am going to share with you an idea for Make Ahead Thanksgiving stuffing that will have you saying "why didn't I think of that?" These crispy sage stuffing balls have everything that you love about stuffing! Soft, bready goodness inside with the crispy outside that everyone tries to grab first when serving up dinner. These are super easy to make and you can always have them on hand for anytime throughout the year!
I made my very traditional stuffing recipe but added fresh sage as well as my regular poultry seasoning. If you are not a fan of the amount of fresh sage I used, you can always leave it out. Micah said that these tasted like a Christmas tree to her. But she is super sensitive to the flavor of fresh sage. So that would be up to you. These are full of what you would expect from a stuffing recipe. Lots of celery and onion. Sometimes I add mushroom to my stuffing and you can do that if you wish.
When everything was ready to go and the stuffing was the right consistency, eggs were added as a binder and a way to ensure these would stick together and enduring the freezing and reheating process. I normally do not add eggs to my stuffing when making it in a casserole. I scooped the stuffing into balls that were approximately 1/2 cup serving size. My disher/scoop was a number 8. The way dishers are numbered is according to how many servings you get from a quart with that particular scoop. So this one was an 8 giving us 8 servings per quart. I got approximately 20 scoops and this would mean I had approximately 5 quarts of stuffing.
Remember stuffing is not a constant. You can add more or less of the broth and the bread cubes to reach your desired consistency. My mom never measured, she just made it. Mixing with her hands in a large ceramic bowl that I only recall coming out at the holidays. It belonged to my Paternal grandmother. it was used for big jobs. Like kifli making at Christmas and stuffing making at Thanksgiving. She still has the bowl and hopefully one day I will have it, even if for a short time.
These stuffing balls can be baked off immediately or they can be scooped and frozen on a baking sheet until solid. Then you can pop them into an airtight container or zip top bag where you can pull out what you need for your meal and bake them from the frozen stage. They will be as fresh as if they were made on that day.

Today we have our very first video from the Noreen's Kitchen Video Vault! this one is a tried and true favorite! The Slow Cooker, Sweet Orange Chicken! Edited and presented to you for your viewing pleasure! I love this recipe and if you have not had a chance to see this video yet, you are in for a treat! This is a true dump and go recipe that delivers a delicious meal at the end of the day. serve with steamed broccoli and rice or noodles of your choice and everyone is going to be super happy!
This makes a ton so you can scale the recipe to suit your needs. When I originally made this video we were a family of four with two hungry teens in the house, so four pounds of chicken was going to give us two full meals along with lunch leftovers. This can easily be cut in half and if you are empty nesters like Rick and I you will still get two nice meals out of this and I would still put one of those meals in the freezer for another night!
You can get even more creative than I did here with the veggies. I added peppers, onions and carrots. I would add even more peppers and maybe even a sliced jalapeno as well as a can of pineapple chunks! I might even cut back on those carrots or slice them into coins if I were a betting woman. Those baby carrots are nice and all but they are kind of awkward to eat when serving on a plate. In my opinion. A handful of chopped cilantro would be lovely at the very end just before serving if you are so inclined. See what I mean? So many options! make this one your own.

Harvey came and went and in his wake left destruction and death. Irma is a category 5 and nothing good can come of that. We want to have a chat. What we think are the most important things to have and what is pretty much useless.
In the event of an emergency, the time to prepare has passed. So if you are facing Hurricane Irma, get the hell out! Start preparing for the next emergency now. It is too late to do anything if you live in the landing zone. You need to prepare in advance and have what you need so that you can keep your head about you when all about you are losing theirs.
We hope that this will be helpful information and we hope that we can calm your fears, quell your nerves and help you on the path to self sufficiency.

This summer I took it upon myself to finally organize my pantry closets and one troublesome cabinet in my kitchen to finally make them workable for me. This can sometimes be a problem for many people and I simply needed to get this done. After watching many organizing videos I came to this solution. It works for me and I hope you find it to be helpful if you have a similar situation. Who knew the answer would be shoe boxes?
I don't know about you but I know where everything is but do not really appear to be that organized. When Rick asks me where something is, I can put my hands on it in quick time, but when it comes to the pantry closets, I am a mess. These get stuffed full and things get pushed back and when I can't find something I buy another because the thought of tearing everything out of there is just too much.
We have all done this. I remember my mom doing similar things and once a year removing everything cleaning out the old. Wiping down the shelves and placing things back in. So I continue the cycle. But that stops now. I will no longer be the "Queen of Shove". That is what Rick has called me for years. Not only am I good at finding a bargain, but I am good at squirreling it away.
I thought I would give the shoe box method a try. This involves several clear plastic shoe boxes that I purchased in bulk at the big box store. In total I think I used about 2 dozen of them. I had to get creative and categorize the groceries. These pantrys are for dry goods not canned goods which are kept in another spot in my kitchen. I still need to go at these with a label maker.
Breaking down the minutia was the task I found to be the hardest. When doing this generalizing can be tricky. Do I put the Asian noodles with the pasta or with the Asian ingredients? This is where the long process got longer.
In the end, I now have really lovely organized pantry closets. I can lay my hands on what I need, when I need it and can simply pull out the box I need, grab the ingredient I want and put the box back on the shelf. This system prevents things from getting shoved to the back of the cabinet. It also helps you to clearly see what is there. Inventory is a breeze.
I also used a similar approach in the cabinet next to my stove. The one I reach into daily for things like spices, salt, vanilla, and all the things you need to make breakfast, lunch and dinner. I found some boxes that would easily fit in my cabinet. This was not easy. I had to take measurements and then go to the store with a ruler. My cabinets are circa 1968. They were not made for storage. They are very shallow and really very user unfriendly. So we make due with what we have and we make it work for us. This works for me now.
