We are celebrating Fish Friday with a Spinach Rice with Salted Cod , all Steamed in Coconut Milk. I love my fish and in this episode we are going to do a staple rice dish from my childhood, using my Mom's recipe, shout out to her for passing on the knowledge. We are doing a Salt Fish Spinach Rice Steamed in Coconut Milk. It's a tasty "One Pot Recipe", that is good on day 1 and even better on day 2. For This Recipe Weill Need:

1/2 Small Onion (Minced)
1 Thai Chilli Pepper (Whole)
1 Green Onion (Thinly sliced)
1 Tablespoon Pimento Peppers (MInced)
4 Cloves of Garlic ( MInced)
1/2 Cup Salted Cod ( Boil Salted Dry Cod for 10 mins and Cool)
2 Sprigs of Thyme
1 Small Tomato (Diced)
1/2 Cup Pumpkin ( Diced)
1/8 Cabbage (Thinly Sliced)
2 Cups Rice ( Washed. I used Jasmine in recipe )
1/2 Cup Coconut Milk
1 Bullion ( Chicken or Vegetable, you preference)
Hot Pepper ( Whole, what ever you have available)
1/4 Teaspoon of Saffron Powder
