mozzarella cheese, 4 slices
basil leaves, 2 sprig
balsamic vinegar, 50 ml
maple syrup, 10 ml
：Caprese Focaccia Sandwich Instruction：
●Making Sauce
1. In a saucepan, pour into balsamic vinegar.
2. Pour into maple syrup.
3. Over the low heat, stir the sauce ocassionally.
4. Let it simmer for about 10 min until the sauce is thicken.
●Making Preparations
1. Toast the focaccia at 250℉ (120℃) for 5 min.
2. Thinly slice the tomato and mozzarella cheese and then set them aside.
3. Cut the focaccia into halves.
●Making Sandwich
1. Put 2 slices of tomato on each bottom half of focaccia.
2. Put 2 slices of mozzarella cheese on each focaccia.
3. Drizzle the balsamic sauce.
4. Put on fresh basil leaves.
5. Cover with the top half of focaccia.

Let's make traditional Taiwanese mochi at home! I made 12 mochi with 4 different fillings all by myself. It's easy and fun! Just pick 1 to 2 fillings to make ahead and make mochi when you want to eat them. Mochi is easy to make but hard to keep the chewy and soft texture overnight, so make sure to make right amount at a time.

○Mochi (12 mochi)
sweet rice flour, 150 g
water, 180 g
sugar, 40 g
○Filling
peanut filling, 45 g （10~15 g/ each）
sesame filling, 45 g （10~15 g/ each）
azuki bean filling, 60 g （15~20 g/ each）
taro filling, 60 g （15~20 g/ each）

：Instruction：
●Making the Mochi
1. In a mixing bowl, add sweet rice flour and sugar. Mix them well.
2. Pour water and stir the mixture until well combined.
3. Brush a thin layer of oil on a glass container.
4. Pour the sweet rice batter into the container.
5. Add 1.5 cup of water into a Tatung rice cooker.
6. Transfer the batter to the Tatung cooker.
7. Cover the lid and start to cook.
8. Place ground peanut and ground sesame on two plates.
9. Take out the cooked mochi.
10. Slightly knead the mochi with a silicone spatula.
11. Brush a thin layer of oil on a baking mat.
12. Place the mochi on a baking mat.
13. Knead the mochi for a while.
14. Devide the mochi into 12 portions.
●Wrapping the Filling
15. Take a small mochi and slightly coated it with ground sesame.
16. Expand the mochi to disc shape from the edge.
17. Place the mochi disc on your purlicue to be like a bowl.
18. Add the filling into the mochi bowl with a small spoon.
19. Wrap the filling in the mochi tightly.
20. Fully coat the stuffed mochi with ground sesame.
21. Make 3 pieces of taro mochi in the same way.
22. Fully coat taro mochi with ground sesame + white sesame.
23. After finished taro mochi, change to coat with ground
peanut.
24. Make 3 pieces of peanut mochi in the same way.
25. Fully coat the stuffed mochi with ground peanut.
26. After finished peanut mochi, add white sesame to the
plate with ground peanut.
27. Make 3 pieces of azuki bean mochi in the same way.
28. Fully coat azuki bean mochi with ground peanut + white sesame.

：Instruction：
●Making Frozen Banana at the Last Night
1. Peel, cut and scale the banana and put into a container.
2. Freeze it for one night.
3. Let the frozen banana thaw on room temp for 2 hours at the baking day.
●Making Brown Butter
1. Put the butter into a saucepan. Melt the butter over medium heat.
2. Once the butter is melted add the rum to the pan.
3. Keep heating and stirring occasionally.
4. When the butter becomes amber color, turn off the heat. It will probably take 5 to 7 min.
●Making Batter
1. Use a fork to mash the thawed banana.
2. In a mixing bowl, add coconut sugar and maple syrup.
3. Crack an egg into the mixing bowl.
4. Add the mashed banana.
5. Mix them well.
6. Add the brown butter and mix them well.
7. Add the whole wheat flour, baking soda and kosher salt.
8. Gently fold and mix until just combined.
●Baking
1. Brush the baking pan with melted butter thoroughly.
2. Pour the batter into the baking pan and slightly flatten the surface of the batter.
3. Peel the fresh banana. Cut a thin slice.
4. Place the slice on the batter cut-side up. Slightly press the banana slice into the batter.
5. Preheat the oven to 350℉/180℃.
6. Send it into the oven and bake for 40 min.
7. 40 min later, gently divide the bread from the baking pan and remove the bread.

■Sweet Custard Thick Toast
1. In a mixing bowl, add whey protein powder and sugar.
2. Add softened butter cubes.
3. Combine the mixture with a butter spreader and fork.
4. Divide the custard spread into 4 portions.
5. Evenly spread a whole portion of the spread on a thick toast.
6. Score a crosshatch pattern with a butter spreader.
7. You can store the topped toast in a sandwich bag and transfer it to a freezer.
8. You don’t need to thaw. When you want to eat, directly bake the frozen toast until the surface is golden brown.
9. Transfer to an oven.
10. Bake at 450℉/220℃ for 5 to 7 min.
11. Turn the baking sheet on the halfway.
12. Enjoy!

■French Toast
13. In a mixing bowl, crack an egg. Whisk it well.
14. Add whey protein powder. Mix it well.
15. Add ground cinnamon. Mix it well.
16. Add milk. Mix it well.
17. Prepare a wide plate, adding half batter first.
18. Place 2 slices of toast on the batter.
19. Pour all the batter on the toast.
20. Flip them over to absorb the batter thoroughly.
21. Place the saturated toast on the preheated pan.
22. Cook the toast until you can move it easily with a spatula.
23. Flip it over.
24. Cover with a lid and cook for 2 min. on low heat.
25. Remove the French toast from the pan while golden brown on each side.
26. Place salted butter on the top of the French toast.
27. Place some fruits on the side.
28. Sprinkle powdered sugar on the top.
29. Enjoy!

30. In a mixing bowl, crack an egg. Whisk it well.
31. Add sugar and whey protein powder. Mix it well.
32. Add milk. Mix it well.
33. Add cake flour. Mix it well.
34. Cover with a lid and transfer to a fridge for 30 min.
35. Heat a pan and add the butter to the pan.
36. Rotate the pan and thoroughly coat it with melted butter.
37. Remove the batter from the fridge.
38. slightly stir the batter.
39. Pour the melted butter into the batter. Mix it well.
40. Wipe off the excess butter in the pan.
41. Pour one scoop of batter into the pan.
42. Rotate the pan to spread out the batter evenly.
43. Cook until the edge is slightly lifted.
44. Flip over the crepe with a spatula and chopsticks.
45. Cook this side for 20 sec, then remove it from the pan.
46. Spread the whipped cream on the crepe.
47. Sprinkle lime sugar and squeeze the lime juice.
48. Fold the crepe.
