Here is a step-by-step guide to making fresh homemade Vietnamese chicken jerky:
Ingredients:
1 pound boneless, skinless chicken breast
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon fish sauce
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon black pepper
1 teaspoon red pepper flakes
Instructions:
Preheat your oven to 170°F.
Cut the chicken breast into thin, even strips about 1/4 inch thick.
In a mixing bowl, combine the soy sauce, honey, fish sauce, garlic powder, onion powder, black pepper, and red pepper flakes. Mix well until everything is evenly combined.
Add the chicken strips to the mixing bowl and toss to coat the chicken evenly in the marinade. Let the chicken marinate for at least 30 minutes.
Remove the chicken from the marinade and place the strips on a wire rack set over a baking sheet. Make sure the strips are not touching each other.
Bake the chicken in the oven for 3-4 hours, or until the strips are completely dry and slightly crispy. You can flip the chicken halfway through the cooking time to ensure even drying.
Once the chicken is done, remove it from the oven and let it cool completely on the wire rack.
Store the Vietnamese chicken jerky in an airtight container in the refrigerator for up to a week.
