Most Linux distros allow you to "live boot" from your installation media. Its a working desktop, but it won't install anything before you very explicitly tell it to. A good way to see which interface style you prefer.
Just about any Desktop is just going to work fine. Laptops can be a touch more tricky, its not a terrible idea to google your laptop model + linux to see how others have faired before you leap ahead.
Yeah, its learning some new things. Its getting used to a new system. There may be troubles you need to solve. Its worth it for the privacy and freedom you are protecting by not running the Operating Systems of companies who SOLD YOU OUT!
