Ingredients:
- 1 kg mutton (goat meat), cut into pieces
- 3-4 medium-sized tomatoes, chopped
- 1 large onion, sliced
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 2-3 green chilies, chopped
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp garam masala powder
- Salt, to taste
- 1/2 cup oil
- Fresh coriander leaves, chopped (for garnishing)
Instructions:
1. In a mortar and pestle, crush the cumin and coriander seeds to a coarse powder.
2. Heat oil in a karahi (a deep cooking pot used in Pakistani cuisine) or a heavy-bottomed pan on medium-high heat.
3. Add onions and sauté until golden brown.
4. Add ginger and garlic paste and sauté for a minute.
5. Add the crushed cumin and coriander seeds and sauté for another minute.
6. Add the mutton pieces and sauté on high heat until they turn brown on all sides.
7. Add chopped tomatoes, green chilies, red is chili powder, and salt to taste. Mix well and cook on medium heat for 10-15 minutes, stirring occasionally.
8. Cover the pot and cook on low heat until the mutton is tender and the oil separates from the gravy.
9. Add garam masala powder and mix well.
10. Garnish with chopped fresh coriander leaves and serve hot with naan or rice.
