Chocolate Covered Caramel Wrapped Pretzels
These pretzels are wrapped with caramel, dipped into chocolate and coated with crushed peanuts.
To make 8 pretzel rods you will need:
8 pretzel rods
155 grams soft caramels
2 tsp cream or milk (dairy or non-dairy is fine)
200 grams chocolate chips (can use white, milk, bittersweet or any kind you choose)
1 tbsp shortening
toppings of choice, optional (I used peanut ground in a food processor)

3 Tbsp coconut sugar (or sub cane sugar)
1/4 tsp ground cinnamon
Pinch sea salt
1-2 Tbsp coconut oil, avocado oil, or olive oil

6 tbsp (80g) granulated sweetener (I used erythritol/monk fruit blend)
1 egg
5 tbsp (30g)dutch processed cacoa powder
2 tbsp flavorless oil
1 tsp sugar-free vanilla extract
½ tsp baking powder
1 pinch of salt
Cream Filling
⅓ cup 90g soft butter (I used Smart Balance)
3 tbsp 18g powdered sweetener (I used erythriol/monk fruit sweetener that I powdered in my vitamix. You may want to add more if you like it sweeter)
1 tsp sugar-free vanilla extract
Optional: 1-2 tablespoons cocoa powder for chocolate filling
