I am still early on in playing with ciders so most of the time I am seeing host different juices, sugars and yeast come out. In these bottles I have Members Mark and Whole Foods 360 Apple Juice. I have a gluten free brown sugar in 4 of the gallon jugs and honey in the other 4. The back row is using Fermentis S-04 Ale yeast and the front row is using a new yeast by Fermentis Safcider.

Both ginger cider bottles have not been bubbling much that last 3 days so I decided it was time to rack and give a try.
The honey ginger cuvee was a little dryer then I would want to drink so it ended up getting more honey added and I will cold crash it after a few days to hopefully give it a little more sweetness. The ginger comes through nicely but not overpowering. We will see how it is after cold crashing and carbonating.
The honey ginger ale came out great. I want to start drinking it now but I am waiting a day to make sure it does not take off from racking and will most likely put it in the fridge to start cold crashing it tomorrow afternoon. I think it will be even better when it is carbonated. The ginger is very sharp. Probably to sharp for most people but it is where i really like ginger.
I added 1/2 t pectin enzymes to each of the bottles and will see where they are at tomorrow afternoon.

Tonight I bottled the 2 gallons of kombucha This got us 6 bottles of each. We did not add anything to these since the flavor was good without needing to add anything. I will get more kombucha going tomorrow.

Three gallons of brown sugar cider started.
Drinking a three flower cider. It has some of the flavors of the mead but watered down version of the mead. I am hoping that one of the other cider comes out with a stronger flavor. You can see in the glass why I am now using a sock to put my herbs into to reduce how much makes it into my bottle.

I got a lot done tonight so here is my log from today. 3 new bottles going(white sugar, brown sugar and honey). 3 bottles racked to a secondary and put int he fridge to cold crash. 1 bottle of 360 Honey Ale bottle with carbonation tablets.

I finally racked my strawberry wine froth bucket into a 1 gallon jug to let it ferment. I am happy with he color at this point, but I pulled in way to much from the bucket.

Racked the Ginger Honey and Brown sugar into glass jars. The ginger will go into the fridge to cold crash. The brown sugar is going to back sweeten.
I found out I do not have enough stoppers for my glass bottles, so I am going to need to change the bottle I racked one of the brows sugars to.
I found that both of the buckets came out at about 10% Alcohol.
I changed my back sweeting for the brown sugar to only adding a half cup of brown sugar.
I show everything else sitting on the bench.
