Vegan Spicy Ramen
Simple and savory, this vegan spicy ramen is the perfect easy recipe for a cold day.
Ingredients
4 cups of vegetable broth
2 cups of water
1 tsp of garlic powder
1/2 tsp of ground ginger
1 tbsp of red curry paste
4oz of ramen noodles
8oz of oyster mushrooms
Scallions for garnish
Directions
1. Add vegetable broth, water, garlic powder, ground ginger and red curry paste into a large pot. Mix well.
2. Add in 4oz of ramen noodles to pot and bring to a boil. Cook for approximately 10 minutes or until noodles are done to your liking.
3. While noodles are cooking, add oyster mushrooms to a small frying pan and saute on medium heat for 10 minutes. Set aside.
4. When ready to serve, add ramen to a bowl and top with mushrooms and scallions. Let cool.
5. Serve and enjoy!

Satisfy Your Cravings with Vegan Buffalo Mac & Cheese
Made with 5 simple ingredients, this light and creamy vegan buffalo mac & cheese is a plant-based twist on a classic recipe.
Ingredients
8oz of elbow chickpea pasta
1 head of cauliflower
2 cups of shredded vegan cheese
3/4 cup of vegan buffalo sauce
Optional for garnish
Chives
Directions
1. Preheat oven to 400F.
2. Bring a large pot of water to a boil. Add in chickpea pasta and cook for approximately 15 minutes, or until pasta is done for your liking. Strain and set aside.
3. Wash and trim cauliflower into small florets. Add to a steamer and cook for approximately 10 minutes or until cauliflower is tender. Set aside to cool.
4. Once cauliflower has cooled, add cauliflower, vegan cheese, and vegan buffalo sauce to a blender. Puree until smooth.
5. Add pasta to a baking dish and pour in buffalo cheese sauce. Mix well.
6. Bake for 20 minutes. Remove from oven and let cool.
7. When ready to serve, top with fresh chives and enjoy!

Made with 4 simple ingredients, this vegan eggplant bacon is a simple and savory breakfast idea.
Ingredients
1/2 eggplant
1/4 cup of reduced sodium soy sauce
1/4 cup of maple syrup
1/2 tsp of liquid smoke
Directions
1. Preheat oven to 300F and line a baking sheet with parchment paper.
2. Slice 1/2 eggplant into long thin strips, omitting the end piece with skin. Set aside.
3. Add soy sauce, maple syrup and liquid smoke to a large bowl. Mix well.
4. Coat eggplant strips well with marinade and add to baking sheet.
5. Bake for 30 minutes, flipping eggplant after 15 minutes. Eggplant should be browned and fully cooked through.
6. Remove from oven and let cool. Serve and enjoy!

vegan crab rangoon
Ready in 30 minutes, this easy to make vegan crab rangoon recipe is a simple and filling snack idea.
Ingredients
1 cup of softened cashews
1/2 cup of canned artichokes
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of parsley
2 tbsp of nutritional yeast
1 tbsp of reduced sodium soy sauce
14 vegan wonton wrappers
Directions
1. Preheat oven to 350F.
2. In a blender, combine cashews, artichokes, garlic powder, onion powder, parsley, nutritional yeast and so sauce. Blend until smooth. Note: You can add 1-2 tsps of water to help mixture blend easier.
3. Portion 1 tsp of mixture into the center of a wonton wrapper. Wet the edges of wonton wrapper with a small amount of water. Fold opposite corners to the center and press to seal. Repeat process until all mixture is used. Batter should yield approximately 14 pieces.
4. Line a baking sheet with parchment paper and place crab rangoon onto sheet. Bake for 20 minutes at 350F, or until wontons have lightly browned.
5. Remove from oven and let cool. Serve and enjoy!

spicy garlic ramen noodles
Ready in 20 minutes, this spicy garlic ramen noodles recipe is a quick and easy vegan dinner idea.
Ingredients
4 oz of ramen noodles
1/4 cup of sunflower oil
1/4 cup of reduced sodium soy sauce
3 cloves of garlic
1 tsp of fresh grated ginger
1 tbsp of crushed red pepper
Scallions for garnish
Directions
1. Bring a large pot of water to a boil. Add in ramen noodles and cook for approximately 5 minutes, or until noodles are done to your liking. Strain and set aside.
2. Mince garlic. Add in sunflower oil, soy sauce, minced garlic, ginger, and crushed red pepper to a large frying pan. Mix well and saute on low heat for 10 minutes, or until garlic has lightly browned.
3. Once garlic has browned, add in ramen noodles and mix well.
4. Remove from heat and let cool.
5. Garnish with sliced scallions. Serve and enjoy!

This 2 ingredient walnut butter with agave nectar is an easy to make and vegan friendly spread, perfect for toast and smoothies.
Ingredients
3 cups of walnuts
1/2 cup of agave nectar
Directions
1. Place walnuts and agave nectar into a blender and puree until smooth. This can usually take about 10 minutes, depending on desired consistency (smooth or chunky).
2. Portion into a jar and refrigerate.
