This recipe makes 3 portions - 2 for dinner (my partner and me and 1 portion for lunch for next day).
Ingredients:
100g Organic Edamame & Mung Bean Fettuccine
150g Woodland Mushrooms
280g Diced Pancetta
300ml Double/Heavy Cream
100g Granda Padano
30g Spring Onions
2 Egg Yolks
Nutritional Values per portion (Carb Manager):
Net Carbs - 6.9g
Fat - 87.3
Protein - 31.9
Calories - 1011
You can reduce the Granda Padano cheese quantity if you want to reduce the calories (I love it cheese). In 100g there is 0g carbs, 29g fat, 33g protein, 398 calories.

Ingredients:
Cupcakes:
3 large eggs
125ml (1/2 cup) double cream (heavy cream)
225g (1 cup) almond flour
55g (1/4 cup) coconut flour
55g (1/4 cup) cocoa powder
30 drops Sucralose or 1/3 cup swerve (to taste)
6g (1 + 1/2tsp) baking powder
1g (1/4 tsp) salt
55ml (1/4 cup) olive oil
Frosting:
200g (1 cup) Cream/Soft Cheese
50g (1/4 cup) Salted Butter
8ml (2 tbsp) Double Cream
30 drops Sucralose
It's low carb ?
Nutritional Values for 1 muffin:
3.1g Net Carbs
15.6g Fat
6.1g Protein
287g Calories
These values are with Sucralose sweetener (0g carbs, see link below). Please check the carb count if you use different sweetener.
How to make homemade Sucralose: 5g Sucralose into 50ml warm water. Shake and it's ready do use.
