Boulangère potatoes / potatoes and onions baked with stock. A boulagngère is a type of bakery and when they were finished for the day the local housewives would come by with pots full of sliced potatoes and onions in stock. They used the residual heat of the ovens to bake the family meal. I love this potato dish as it's comfort food at it's best, bit like dauphenois without the cream so also very healthy. Slow braised shoulder of lamb shepherds pie, topped with buttery mashed potatoes. The most common recipe for shepherds pie is made with minced or ground lamb, I however love a little texture and more flavour so in this recipe for shepherds pie I first slow cook lamb shoulder, then shred this to combine with vegetables and gravy and top the pie with buttery mashed potatoes. So you must please try my recipe for shepherds pie, it really is delicious.

Slow braised Beef Ox Cheeks in beer served with Colcannon mash, creamy mashed potatoes with bacon and cabbage. Ox cheeks are becoming very fashionable now and they must be slow cooked to take full advantage of all that collagen protein you must braised ox cheeks or stew them, but long slow cooking is essential. So when the pot is assembled in this case with beer and vegetables but of course red wine would be great, put in in a low oven and forget about it for several hours. The result is all that collagen breaks down creating a flavour that a sirloin or fillet steak can only dream of, yes I consider these cheap slow cooking meats such as ox cheek far superior to the more expensive cuts. I think you will agree if you try my braised ox cheek recipe, and the very Irish colcannon mash is amazing.

Chicken fricassee
Bone in chicken thighs 6
Diced onion 1
Chopped garlic 3 cloves
Sliced mushrooms 250g
Chicken stock 250ml - 1 cup
White wine 300ml - 1 1/4 cups
Creme fraiche 300ml - 1 1/4 cups
Parsley and thyme
Salt and pepper to taste
Unsalted butter 1 tbsp
Oil 1 tsp
Plain or all purpose flour 2 tsp
Brown chicken and remove, sweat onion - mushrooms - garlic - thyme. Add flour and stir to a roux, add wine and simmer until the wine reduces to taste good, then add the chicken stock - add chicken and simmer until fully tender.
If the sauce is getting too reduced, cover with a lid, finish with the creme fraiche and lots of fresh parsley.
