Greetings! I hope that you all are doing your best to keep cool during these incredibly hot dog days of summer. I cannot recall a summer in recent years that has been quite as hot as this one. With heat index readings in my area reaching 110 degrees, firing up the oven and making a big roast dinner is not in order. What is in order though is my mom's old standby for days like this and she always called it cold platter.

I will show you how I make mine and hopefully you can come up with somethings that your family will love that you can include on yours. Tuna, hard cooked eggs, fresh garden veggies, olives, pickles, cheeses and meats are some things I always choose for ours. What does your family love that you have in the house right now? Take a look in your pantry, fridge and garden and I'll bet you can whip up a platter that will satisfy even the meat and potatoes crowd without making too much work for these hot, hot days.

Well, it had to happen eventually! Many of you have suggested that I share grocery hauls. Up until now I have always felt a little uncomfortable with that so today we are going to start by doing a massive Sam's Club haul. Today is the first official day of summer vacation for my girls so we decided that it would be fun to drive to Jacksonville and have lunch and do a bit of shopping. We planned a Sam's club trip so we could replenish things we needed and buy things for videos and family meals. So that is exactly what we did. I don't know what it is about grocery hauls! I love to watch them and every time Heather puts one up I love to watch, so I figured, why not!? So, for all of you who have been begging me to do a grocery haul, here you go. I hope you enjoy it! Today I want to share how you can simply build an amazing charcuterie platter for your holiday party spread. This is the platter I made in my recent video on how to entertain on a budget. All the ingredients came from Lidl grocery but you can easily do this with ingredients from the local grocery store! You decide what goes into this. It doesn't have to be fancy or expensive, just tasty. You can use a platter, a dinner plate or even a cookie sheet if that is what you have. Don't let your lack of something special stop you from spending special time with the people you love in your life! Charcuterie is a french word that simply means, "cold cooked meats". Often times you can find a charcuterie station at better grocery stores where they will offer smoked and cured meats that are perfect for this application. You will know them better as salami, smoked sausage, ham, etc. Today I am using capicola, peppered salami, regular salami and Prosciutto. You can use whatever you prefer! As elaborate or as simple as you like. I always like to add some fresh fruit. In this case some beautiful fresh grapes as well as some dried figs and dates. These are both palate cleansers and they cut the fattiness and saltiness of the meats and help you to enjoy the flavors altogether. Sliced crisp apples or pears are a great option and I also love dried apricots and mangoes as well. Today I kept it simple! You go for what you like. Here is a twist on a traditional dinner salad that you might enjoy. Taking inspiration from Buffalo hot wings, I made this salad that is full of those flavors. First I made a buffalo ranch dressing that you can see here: http://bit.ly/buffaloranchdressing Than I mixed up a salad using some cold grilled chicken breast, shaved fresh celery, matchstick carrots halved, grape tomatoes and a bit of shredded cheddar cheese. You can use blue cheese crumbles, but I was fresh out, so I used what I had on hand. This was a cool and refreshing and filling dinner salad that I will be serving again when salad night rolls around. We do salad night at least once a week in the summer. This can be done easily if you plan a bit in advance and when you fire up your grill for a weekend BBQ, just go ahead and throw a few extra pieces of chicken on to cook and then later in the week you will be all set to throw together a cool salad for a quick dinner on the fly! Today I am sharing my top five favorite dish washing tools! Even though we have a dishwasher there are still a number of things that I wash by hand and these tools help me to do that efficiently. They also help me get my pots, cast iron and baking pans super clean. Not to mention my counters, cabinets and other things that I clean every single day!
