Greetings! Earlier last week, you will recall that I posted a recipe for bean and bacon soup. So many of you asked me how I made the biscuits, how could I refuse you? Here is the recipe for the buttermilk biscuits that I usually make. They are simple and delicious. I suppose you could use shortening in them if you wish, but I never have and don't know how they would turn out. I have, however, made them with the alternative version of buttermilk with splendid results. So as a refresher here is what you do if you don't have buttermilk:
Since this recipe calls for 2 cups of buttermilk I will use the conversion for this recipe:
2 cups of buttermilk would equal: 1 ¾ cups of regular milk (preferably whole or 2%) with ¼ cup of lemon juice or white vinegar. Mix together and allow to sit on the counter for 10 minutes. After that time when you stir the mixture you will see that it has thickened and become like buttermilk. I always have the best luck when I use lemon juice as opposed to the vinegar, but they both work well.

Recently, I had the pleasure of helping to plan and execute an ice cream social at my church. We were hosting someone from Operation Christmas Child who had received a box 17 years ago when she lived in what was deemed a hard to reach country. Her story was so compelling and it was awesome to hear of her experience. We hosted this ice cream social after her presentation. This went together fairly quickly. We ordered the fro yo cups and wood ice cream spoons from Amazon and I picked up some table cloths and other decor pieces from the dollar store. You would be amazed at what a package of doilies will do for your look! We had both chocolate and vanilla ice cream that was scooped to order and had both cake and sugar cones available for those who liked them.
I grew up with a mom who was a pastry chef and caterer. I have done my fair share of catering and party planning and this was so much fun to take part in! With a little knowledge and a list, you can get things done quick. If you know where to buy things it also makes things that much easier. Thank goodness for Amazon where you can get just about anything delivered to your door in a couple of days!
This was an "Ultimate" sundae bar so we had to have toppings. These were divided into wet and dry and hot and cold. I made four sauces that included hot fudge, hot caramel and hot peanut butter and I also whipped up a simple shortcut strawberry topping. We had chocolate syrup available as well as southern favorites, wet walnuts and pecans. You can't forget the maraschino cherries and whipped cream!
I used several jelly jars for the dry toppings that included candies, cookies, and even cereals along with chips and chocolates and yes, lots and lots of sprinkles. I made little signs for each jar with printer labels and a fun font that looked like the popular Rae Dunn home decor that everyone loves so much!
We filtered people through the line and hand scooped ice cream that was partially donated by a local shop and everyone got to build their own treats. It was so much fun! Quick tip if you choose to do this, I set up a bread pan with some non slip and two pint jars with warm water and a couple of dollar store ice cream scoops to make scooping easy!
Everyone had so much fun and we may do this again in the future. I think this would be an excellent addition to a baby or bridal shower or graduation party! Gets people involved and gets them talking. Such a great way to bring people together! This would also make a great fund raiser as well! Charge per head and make money for your cause!

Today I want to share a delicious salad that I have been enjoying for a couple of weeks now for my lunch. This avocado mango salad with strawberries, hits all the note, is super satisfying and will keep you coming back for more. I think you are going to love it!
This salad screams summer! It has all the freshness that you look for in a summer lunch. It smells amazing when you are making it and it looks amazing when you get it all in the bowl together. This one is a knock out the ballpark winner! I personally love a salad that has not greens in it from time to time. I love to have a chopped salad that has lots of veggies and fruits mixed together and this one is the perfect combination.
I know what you are thinking! Mango AND avocado AND strawberries AND onions? Really? Yes Really! Trust me on this one. This hits all those flavor notes you are looking for. Sweetness from the berries, tangy from the mango, rich creaminess from the avocado and spicy bite from the onion. Lime juice brings the whole thing together with a palate cleansing citrus burst and married with a little bit of agave nectar to enhance the natural sweetness of the berries and the mango. Top this all off with a sprinkling of homemade chili lime seasoning and you have one out of this world experience in your bowl for lunch or dinner!
Like I said, I have been enjoying this for lunch the last couple of weeks. Normally I only eat two meals a day so Rick and I either enjoy breakfast and dinner or brunch and dinner. This is the perfect afternoon offering. i have been pairing this with a hard boiled egg on the side and this takes me to dinner with no problem. This is light but filling and it will stay with you and give you what you need to get the job done.
This salad is enough for two people as a side dish to a nice piece of grilled chicken or you can even serve this on top of the grilled chicken or a nice filet of grilled or broiled fish! This salad has amazing potential. Make it fresh when you want to enjoy this because it won't keep very well past a day or so because the avocado may get to mushy and disappear if it is ever so slightly too ripe. So you will want to keep that in mind.
If you don't have access to fresh strawberries or they are not in season, you could use blueberries, blackberries or even cubed nectarine, plum or peaches would be great. You can basically make this work with so many different fruits! Don't have sweet onion? Use red onion or green onion to round it out. Don't like onion? Skip it! Make this salad your own and enjoy!

Let's use some of those delicious, preserved lemons and roast an amazing Tuscan style chicken! I am doing this in my cast iron skillet today because it makes roasting a chicken super simple and it conducts heat really well. This chicken is super simple to throw together with preserved lemons, aromatic veggies and some of my homemade Tuscan seasoning blend along with a bit of olive oil and you are on your way to a fantastic meal!
This chicken is just plain delicious. Flavors that are extremely poultry friendly here. The preserved lemons add a freshness that you will love. Along with the onions that roast to caramelized perfection and the other roasted veggies that are a perfect accompaniment to the main course. Cooking in cast iron was my preference, but, of course, you can do this in a roasting pan of your choice.
I have preheated my oven to 400 degrees while I prepped the chicken for roasting. Just wash the chicken, inside and out, being sure to remove all the "stuff" that may be in the cavity. Then pat dry with paper towel. This will help to get a nice crispy skin. I used a few carrots and a few stalks of celery, along with one medium onion and a few cloves of garlic. I used about 8 ounces of preserved lemons. Hint: If you don't want to wait to preserve your own lemons, like I did, you can often find them seasonally at Trader Joe's and other specialty grocers. You can also make this dish with fresh lemons. No matter what you choose, it will be delicious! I have also used a sprig of fresh rosemary as well as a sprig of fresh thyme to compliment my homemade Tuscan seasoning blend.
Place some of the onion, garlic, carrot and celery inside the cavity of the bird along with the sprigs of fresh herbs, which are optional. Place the remaining celery and carrots under the bird to act as a roasting rack, of sorts. Place some of the lemons in the cavity as well. Then place the rest of the onions around the chicken along with the some of the lemons.
Drizzle the chicken with olive oil then sprinkle, generously with the seasoning. Give everything a good rub to be sure it is coated well all over. Lay preserved lemon slices on the chicken. This does not have to be perfect and don't worry about attaching with toothpicks or anything. You really just want to perfume the meat with the lemony goodness. Any remaining lemon slices can be placed around the bird.
Place the skillet in a 400 degree oven and allow to roast for 30 minutes. This will give the skin an opportunity to flash roast and remain crispy. Then turn down the heat to 325 and continue roasting for an additional 45 minutes to an hour, or until an instant read thermometer shows no less than 160 degrees when placed in the thickest part of the thigh.

Here is "Budget Buster Bulk Cooking Chicken Edition" meal number 3! Chicken pizza two ways. Technically this is going to be two meals because we will only eat one pizza's worth of pizza for dinner than the other for lunch the next day so this could technically count as two meals. Not bad from one chicken breast's worth of shredded meat!
This could not be simpler! I used my Big Batch Pizza dough recipe that you can find here: http://bit.ly/1lTqltm.
I used my favorite homemade BBQ sauce to make a quick Hawaiian style chicken pizza with shredded chicken, sliced pineapple pieces and both mozzarella and cheddar cheese. I also made a buffalo chicken pizza. I make a traditional buffalo sauce using 1/4 cup of melted butter mixed with 1 cup of Frank's hot sauce. Since that is a little on the thin side for a pizza sauce I wanted to thicken it up. I mixed in 2 tablespoons of instant clear jel which is a modified food starch. This is the instant kind and not the type for canning. It immediately thickened up my buffalo sauce to a pizza sauce consistency and made it perfect for spreading on the pizza dough! You can use it in both hot and cold applications and this is also what I use to stabilize whipped cream.
The buffalo chicken pizza was simple! Just spread the buffalo sauce on the pizza dough, add mozzarella cheese, shredded chicken and cheddar cheese on top and done! Easy! This was a hard night for me getting these pizza's in the oven! So the fact that I even got to make a video was astounding. In the end, we enjoyed pizza night with super puffy pizza due to the fact that the dough had to sit for a while before I could get to it! Life happens. Nonetheless, the pizza was delicious!
Don't let my pizza be your limit. You can make yours any way you like. In the future, I would add sliced red onion and bell pepper to my Hawaiian chicken pizza and the buffalo chicken pizza would be great with some candied jalapenos added to it! Let your imagination be your guide as well as the leftovers in your fridge! You can put just about anything on a pizza and your family will be super happy you made it for them!
