云南牛味百态(四)
云南有一类美味叫“撒撇” ,“撒”是傣语,是“拌生”的意思;在云南,万物皆可“撒”,猪撒,牛撒,鱼撒,水果撒,每一款都独具特色。“撇”是指“苦肠” ,而最经典和难忘的还是“牛苦撒撇”,就是用牛苦肠水拌生牛肉,制作复杂讲究,还有点生猛,但对于从小吃到大的云南人来说,便是想到就能流口水的稀奇美味。

Various Ox Recipes in Yunnan (IV)
Here in Yunnan, we have a special delicacy named "Sapie". "Sa", which comes from Dai language, means "seasoned raw ingredients". In Yunnan, everything can be made into a "sa", such as pork, beef, fish or fruits. Each has its unique flavor. "Pie" means the bitter intestines, or bile. However, the most typical dish is of course "bitter beef sapie". It is a mixture of beef bile and raw beef, which requires much effort to make and is very tough. But for us from Yunnan, who started to enjoy the dish since we were kids, just the thought of it will make us drill.

村里的年味一直都是浓郁的,从进入正月开始,杀年猪,备年货,祭祖祭山神,年夜饭,就一直没停歇过!今年我终于有时间舂了心心念念很久的糍粑了,也给村里人都分了些。周围邻居单独在家的要么邀请到家里吃饭,害羞不来了就送了些他们爱吃的东西过去。又是一年新春,希望我们都能健康平安,团圆幸福~

The festive atmosphere of Chinese New Year has always been strong in my village. Since the first month of the lunar year began, we’ve been busy preparing for the upcoming new year: annual pig killing, doing Spring Festival shopping, ancestor worship, offering sacrifices to God of Mountains, and New Year’s Eve dinner… This year, I finally got some time to pound steamed glutinous rice to make rice cakes, and shared some with other villagers. Some neighbors are home alone, so I either invited them to have dinner with us, or sent some food they like to them when they refused because they’re too shy. Another fresh new year is here. I wish all of us a joyous, safe, happy and healthy year!

祖辈留下来的排骨储存方法中,除了做腊排骨,骨头鮓,还有一种猪肝鮓。同样的调料,光有排骨就叫“骨头鮓”,是我们施甸的特色腌辣,如果加上猪肚和肥肠,就成了大理的“猪肝鮓”, 这道菜全程没有用到猪肝,但是祖辈们都叫它猪肝鮓,口味和吃法都类似,可蒸,可炒,可烩……当成一种特色调味料~每年杀年猪都会做一些储存。

Among the traditional ways to preserve ribs, besides preserved ribs and preserved bones, there is also one recipe called preserved pig liver. Both of them have the same cooking methods and can be steamed, stir-fried and stewed. It is used as a special seasoning ingredient. We usually make some when killing the annual pig each year.

7月的版纳,没有4月泼水节的热闹,天气也异常火辣,但丝毫不影响我对这里的喜爱!找一个当地人的菜市场逛逛,一定超乎想象的丰富和猎奇!刚好遇到傣族的关门节,这也是我一个外地人可以随意在寨子里游荡的最后的时间!关门节以后的三个月有很多禁忌,主要是雨水珍贵,傣族人得专心耕种,等待秋天的丰收,等待来年的好日子。
