Chicken Tortilla Soup Recipe: Chop 1lb grilled chicken, 1/4 white onion, 1/2 cup of jalapenos Satay onion in 2 table spoons of vegetable oil until slightly clear and slightly brown Add to pot with cans of beans, drain corn and add as well Add jalapenos Add 3/4 cup of taco bell hot sauce (full bottle for more robust soup) Add both quarts of chicken stock stir often, with the heat on high, until it comes to a boil Turn the heat down to 60% and let boil for 20 minutes Add in the pint of heavy whipping cream and allow to boil another 20 minutes, stir every 2 minutes until the time is up. Do not allow a film to form Turn the heat down to low heat or turn off and allow to simmer for 5-10 minutes Add spicy lime chips to reach desired heat (in the bowls, if the pot will not be eaten same day) Serve (Serves 18 bowls) For more detailed instructions, see the video above. Chicken Quesadilla Recipe: Chop 1lb grilled chicken and 1/2 cup of jalapenos Add 1/2 cup of jalapeno juice to the mixing bowl Add jalapenos Add 1 cup of mayonaisse Add 2 tablespoons of garlic powder Add 2 tablespoons of ground cumin Add 2 tablespoons of paprika Add 2 tablespoons of ground cayenne red pepper Add a pinch of oregano Add salt to taste (3/4 teaspoon recommended) Mix well, ensuring all clumps are gone Spread three spoon-fulls of sauce on tortilla, like a pizza Cover in Mexican blend cheese Cover is chopped grilled chicken Add top tortilla Repear in stacts of 2, to maintain integrity Rub cooking spray, butter or margerine spread on grill (to keep from sticking) Place 1-2 quesadillas on the grill and press down ... https://www.youtube.com/watch?v=MJEXz2denGo
