::UNREASONABLE RECIPE::
12 oz ground pork rinds
24 large eggs
5 lbs 80/20 Ground beef
8 oz cheddar cheese
3 medium avocados
4 oz sour cream
16 slices trash (American) cheese
1/2 cup whole milk
1 tsp chipotle powder
1/4 cup + 1 tsp salt
1 tbsp cumin
1 tbsp chili powder
2 tsp onion powder
1 tbsp garlic powder
1) In a food processor or blender, add all of your pork rinds and eggs. Blend together until a smooth batter has formed. Add 1/4 cup of water to smooth it out if yours is looking a little too thick.
2) In a very large pan or a griddle set over medium low heat, pour your batter out in a spiral and smooth out with a spoon or spatula. Cook for 2-3 minutes or until lightly browned. To flip, grab your 2 biggest spatulas and give it a confident flip. Cook for about 30 seconds on this side. Remove and repeat until all of your batter has been used up.
3) In a bowl, add you salt, cumin, chili powder, onion powder, and garlic powder and combine.
4) Turn your pan or griddle up to medium high heat and add your ground beef. Using a water bottle or cup of water, begin to slowly add water while at the same time chopping your beef. Repeat this until your have a find crumble beef and is cooked ~90% through. Once there, turn off the heat and add your seasoning 1 tbsp at a time and continue mixing. Taste and keep adding seasoning as needed.
5) Add 16 slices of American cheese to a double boiler set over medium heat along with your milk, hot sauce, and chipotle powder. Whisk this together, adding milk as needed to thin it out.
6) Roll out a large piece of foil and lay your tortillas down. Next, add your ground beef. Then add 8 oz of shredded cheddar cheese. Follow this up with 3 diced avocados. Now, add your sour cream. Finally, pour over half of your cheese sauce. To fold this, Pick up one side with two people, and gently drape over to the other side of the tortilla. Press firmly. Next, Wrap the foil over and then close off both ends and wrap firmly. Serves 16.

Blue cheese may not be for everyone, but it's fantastic in this bacon wrapped ribeye roulade. It's perfect for the carnivore diet if you allow cheese. If not, feel free to skip that and still make it!

RECIPE
BEARNAISE
2 Egg Yolks
2 Oz Butter, Unsalted
1/4 tsp Salt
1/4 tsp Tarragon
1/4 tsp Black Pepper
1 tsp Lemon Juice
1) In a double boiler, add your egg yolks and lemon juice and whisk until foamy and the yolks lighten in color.
2) Add in your cold butter and whisk until thickened. Season with your salt, pepper, and tarragon.
ROULADE
12 Oz Ribeye, Butterflied
6 Strips Applewood Smoked bacon
1 Oz Blue Cheese, Crumbled
1/4 tsp Salt
1/2 tsp Charcoal Seasoning
1) Lay down some plastic wrap and shingle your bacon.
2) Lay down the butterflied ribeye on top of these and season one side with your salt.
3) Spread out your blue cheese on top of the ribeye.
4) Roll this up and wrap tight in plastic wrap. Refrigerate for at least a half hour. After refrigerating, tie with twine (reference video on how to do this: 2:27)
5) Cook on the grill in a medium heat zone and season with your charcoal seasoning. If the bacon is cooking too quickly, get your color on the outside and place into an oven at 400°F for 15 minutes or until you reach an internal temp of 130°F. Let rest for 10 minutes once out.
6) Slice and top with bearnaise

Simple Corned beef and swiss egg bites for the carnivore diet.
RECIPE
8 Oz Cooked Corned Beef
3 Oz Swiss Cheese, Shredded
1/4 Cup Sour Cream
3 Eggs
1/4 tsp Salt
1) You can use fresh, canned, or cold corned beef here. If you go my route, simply place a pre-brined corned beef into an instant pot with the seasoning packet and 2 cups of water. Close the lid and set to pressure cook. Cook this for 43 minutes. Once out, shred and set aside 8 oz of it for the recipe.
2) In a mixing bowl, add your corned beef, half of your swiss cheese, sour cream, eggs, and salt. Whisk this until homogenous.
3) Set the oven to 350°F. Into a standard greased muffin tin, add all of your mixture. Top each one with the rest of your swiss. Place this into the oven for 15-16 minutes or until a tooth pick comes out clean when stuck in the middle. Let cool at room temp for 5 minutes before attempting to remove.

This one is less of a recipe and more of a technique.

2 Oz Mozzarella
1) Place a non-stick pan over medium heat and add your cheese in a thin layer.
2) Let this cook and caramelize for about 2-3 minutes or until you can start to see the browning from the top. Feel free to flip if so desired to caramelize the other side, but it's not necessary.

~Waffle~
2 Scoops of Protein Powder (of choice)
2 Eggs
1/2 Tsp Baking Powder
1/4 Cup Water
Shake of salt
~Chicken~
2 Skin-on Bone-in Chicken Thighs
2 Oz Ground Pork Rinds
1/4 tsp Chipotle Powder
1/4 tsp Garlic Powder
2 Eggs
2 Tbsp Hot Sauce
~Hollandaise~
2 Egg Yolks
4 Tbsp Butter, Unsalted
1 Tbsp Vinegar
1 tsp Chipotle Powder
1/4 tsp Salt
1) Add 2 eggs and your hot sauce to a mixing bowl and mix well.
2) Place your ground pork rinds, chipotle powder, and garlic powder onto a flat plate and mix together.
3) Take your chicken and place it into your egg mixture and them into your pork rinds. Press the pork rinds in by hand until the chicken is thoroughly coated. Place this onto a parchment paper-lined baking sheet and place it into an oven set to 425°F for 30-40 minutes or until an internal temperature of 165°F has been reached at the bone.
4) In a mixing bowl, add your protein powder, remaining eggs, salt, baking powder, and water. Give this a whisk until completely smooth.
5) Preheat a waffle iron to medium heat (if applicable) and pour in half of your batter. This recipe should make 2 normal-sized waffles. Cook until browned through.
6) Setup a double boiler over medium high heat. Add your 2 egg yolks and vinegar and begin to whisk until bubbles start to form. Next, take chunks of butter and begin whisking them in until they completely incorporate. Do this until all of your butter has been used up. Once your sauce has thickened, add your salt and chipotle powder.
7) Place a piece of your chicken over a waffle and drizzle on your hollandaise.

RECIPE
2lb Cream Cheese, Softened
3 Eggs, Room Temp
1 1/2 Cups Erythritol
1 tsp Vanilla Extract
1 1/2 tsp Pumpkin Pie Spice
1) Using a stand mixer or a hand mixer, place place in all of your cream cheese and erythritol and begin to mix on low. Do this for about 3 minutes or until the two are creamed together.
2) Add in your vanilla extract and pumpkin pie spice and mix in for about one minute.
3) Crack in your eggs one at a time until each is fully incorporated before adding the next.
4) Grease up a 9" spring-form pan with butter and add in a parchment circle to the bottom. Wrap the bottom of the pan in two layers of heavy duty aluminum foil. Pour in all of your cheesecake mixture and tap the pan against the table to release some of the air.
5) Place this entire thing into a deep baking dish or a hotel pan and fill it up with hot/boiling water until it's 1/3 up the side of the pan. Place this into an oven that's been set to 350°F for 50-60 minutes or until slightly jiggly when moved.
6) DO NOT REMOVE FROM THE OVEN. Turn the oven off and crack the door open and let sit for 30 minutes before removing. Once time has passed, let sit at room temp for 30 minutes before refrigerating for at least 3 hours.
7) Cut with a knife that's been ran under hot tap water for clean cuts. Serve cold.
